Growing up, meatloaf was a staple in my household. It was such a nice, hearty dish, and there were always plenty of leftovers to enjoy throughout the week.

So whether I need to feed a crowd or just want to do some easy meal-prepping, I love making this delicious Keto meatloaf! It's so yummy and satisfying, you'll never even miss the breadcrumbs.

Plus, this low-carb twist on classic comfort food comes together with only a few minutes of prep! Just mix the ingredients, form the loaf, whisk the sauce, pour over the loaf, and toss it all in the oven. How easy is that?

And while it's baking, you can clean up the kitchen, whip up some tasty sides, maybe even pour yourself a Keto mojito and kick your feet up... c'mon, you deserve it!

What Can I Use Instead Of Breadcrumbs For Keto Meatloaf?

Traditional meatloaf recipes include breadcrumbs as a binder to hold the loaf together. As you might imagine, this adds a lot of unnecessary carbs.

That's why, for this recipe, we ditch the bread and use pork rind crumbs instead! They're great for binding the meat, just like in my bacon cheeseburger Keto kebabs.

Combining the pork rinds with ground beef, low-carb vegetables, seasonings, low-carb sweetener, and mustard means we end up with a VERY Keto-friendly dish. Each slice of meatloaf comes out to only 3 net carbs!

This recipe is is my go-to when I'm craving classic comfort food that I can feel good about eating.

Is The Sauce On Top Keto-Friendly?

You bet! And it's all thanks to a few low-carb ingredient substitutions.

The trick is to find sugar-free (or no-sugar-added) ketchup, which you'll use both in the meatloaf and in the sauce that goes on top. There are some great brands available at the store, or you can make your own right at home!

I always like to have a batch of my homemade ketchup with a kick on hand. I use sriracha and cayenne to add a little heat, but you can omit if you prefer a more traditional taste.

Next, instead of traditional brown sugar, we'll use a low-carb brown sweetener like Swerve. No need for any sugar or molasses here.

Finally, just add a little Dijon mustard, which is already very low in carbs. That's all you need for your low-carb sauce!

What To Serve With Keto Meatloaf

Meatloaf takes about an hour to bake in the oven. That means plenty of time to make your perfect side dish!

Cauliflower potato salad or broccoli salad with bacon are two great choices. Their tangy flavors are a nice way to balance the hearty ground beef loaf.

For something light and refreshing, I always love bacon herbed cream cheese cucumber bites. They're a fun finger-food that provides such a nice crunch.

If you're lucky enough to have double ovens, OR you have some time to prep your sides ahead of the meatloaf, low-carb bread makes a fantastic option! Who can resist Keto focaccia, cornbread, or rolls?

Can You Store Leftover Meatloaf?

ABSOLUTELY! That's one of the best parts about Keto meatloaf.

This recipe makes eight total servings. So, unless you're feeding a crowd, you should have some extra slices to enjoy later in the week.

I recommend storing your leftovers in an airtight container in the refrigerator. They will stay fresh for up to four days.

Preheat the oven to 350 degrees.

In a mixing bowl, combine the ground beef, onion, bell pepper, â…“ cup of sugar free ketchup, pork rind crumbs, garlic powder, Worcestershire sauce, and salt and pepper to taste.

Mix until completely combined, then transfer to a 9x13 baking dish and form into a loaf.

In a small bowl, whisk together the Swerve brown sugar substitute, Dijon mustard, and remaining ÂĽ cup sugar free ketchup.

Spread the sauce mixture over the meatloaf in the pan and bake for 1 hour or until cooked through.
