Bacon Herbed Cream Cheese Cucumber Bites
One of my favorite snacks to make is this tasty cucumber snack. I simply love how refreshing it is and I feel like I just ate something HEALTHY afterward vs some unhealthy, quick snack. Even though this IS super quick!
I have another goat cheese cucumber bites snack that is made using cucumbers, goat cheese and cherry tomatoes. That one is super yummy too. But if you have a little more time to devote to the filling, then these bacon herbed cream cheese cucumber bites are the way to go!
These are a perfect snack and I’ve even been known to have these for my main lunch. They are not only yummy, but totally filling as well.
These are my goto snack and appetizer that I like to bring to parties. They are a favorite among many people and fit well with lots of eating lifestyles (keto, glute free, etc…).
How to Make Bacon Kerbed Cream Cheese Cucumber Bites
Peel and slice the cucumber, and set aside.
In a small bowl, combine the cream cheese, herbs, bacon and salt and pepper to taste. Stir to combine well.
Top one slice of cucumber with some of the cream cheese mixture, and place another slice on top to form a mini sandwich.
Repeat above step until you have formed 10 small sandwich bites and serve.
Can I Use to Filling For Other Things?
Oh yes!
The cream cheese filling can be used for many other things! A few that I really like are to dip keto chips in it. Or spread it on some keto flatbread.
Another healthy snack is to dip some carrots or celery into the dip.

Can I Make These Cucumber Bites Ahead of Time?
You most certainly can! I don’t recommend making the full recipe ahead of time, though.
I would only make the dip ahead of time and store it in an airtight container in the fridge for up to a day or two. Then when ready, complete the recipe by assembling the cucumber bites.

Keto has interesting effects on the digestive system. For most people, it seems to cause constipation. For others, it does the opposite.
Either way, our bodies need water. And guess what percentage of a cucumber is water? Over 90%! That’s right. Eating a cucumber is like drinking delicious and healthy water. Well, not really, but you get the idea!
Are Cucumbers Keto Friendly?
They are most certainly are! Not only are they mostly water like we just talked about, but they are only 2 carbs in 1/2 cup of sliced cucumbers. That is pretty awesome!
Cucumbers really are a great snack whether you are low carb or not. They are very refreshing, filling, with few calories. A guilt free snack no matter what your eating lifestyle!

Ingredients
- 1 – 1 1/2 large cucumber s peeled and cut into ½ inch slices
- 1/3 cup bacon pieces
- 2 tablespoons freshly chopped chives
- 2 tablespoons freshly chopped parsley
- 4 ounces soft spread cream cheese you can also use whipped
- Salt and pepper to taste
