Keto Bacon Wrapped Meatloaf
Growing up, meatloaf was a staple dinner in my house. My mom made the most basic, yet delicious, meatloaf around! I would drown the poor thing in ketchup and gobble it all up!
Meatloaf started out as (and has continued to be) a staple food for me. A comfort food too! And the great thing about it being a comfort food is that it is not full of sugar!
Traditionally, meatloaf normally contains breadcrumbs. This recipe uses pork rinds (substitutes available, just keep reading) and so you get that delicious meatloaf texture that you know and love.

How to Make Keto Bacon Wrapped Meatloaf
Preheat the air fryer to 350 degrees.
Mix together all of the ingredients except for the bacon slices. Knead with your hands until completely combined.

Form the meatloaf mixture into 6 evenly sized mini meatloaves.

Wrap each of the meatloaves in a slice of bacon.

Place the meatloaves on a rack in the air fryer, and cook for 25-30 minutes until the bacon is crispy and they are completely cooked through.

Do I Need to Wrap the Meatloaf in Bacon?
You actually don’t. The meatloaf will stay together and hold up just fine.
BUT, I mean, it is BACON!
In all seriousness though….. The bacon not only gives each bite a bit of bacon heaven, but the bacon juice absorbs into the meat to really take these over the top!

What are Pork Rinds?
Are you ready for this? Pork rinds are basically deep fried pig skins. I may or may not have gagged when I learned this. Not sure why it felt any different than eating chicken skin. I got over it!
I’m not the biggest fan of pork rinds, but I have to say they sure do serve a purpose.
They are great when you want something crunchy or need a breadcumb-like substitute.
I know people who eat these things like candy. I don’t. But I do use them for things such as meatloaf because they really are perfect and do have good flavor!
Do I Have to Use Pork Rinds?
Not at all. You can try to use keto breadcrumbs if you like. But I will say that the pork rinds really do offer a very unique and delicious flavor!

Toppings for Keto Bacon Wrapped Meatloaf
You can put any topping you like on meatloaf. It is quite versatile.
I have to say, though, that my favorite meatloaf toppings are:
Keto Ketchup – Make your own or use lower sugar ketchup since traditional ketchup is high in sugar.
Keto BBQ Sauce – The BBQ sauce pairs really well with the bacon.
Thousand Island Dressing – Yes, thousand island dressing! Pour it on the side and dip!

Kitchen Essentials
You will need a nonstick baking sheet for sure. You can use a baking dish if you prefer but I do find that baking sheets work a little better.
If you want easier cleanup, you can also use parchment paper to line the baking sheet. Cleanup is a breeze then!
