Keto Chicken Fricassee

One of my favorite ways to cook really any meat is to "brown" the outside first and then finish cooking in a thick and delicious creamy sauce.

Even my hubby will sear (is that the right word???) the outside of a roast before putting it in the crockpot. He likes to keep the juices in the meat.

This keto chicken fricassee is beautifully seared on both sides before finishing up cooking in a creamy white wine sauce packed full of seasonings and topped with veggies.

A dinner the entire family will love.

How to Make Keto Chicken Fricassee

Place a high sided skillet over medium-high heat on the stove.

Add in the bacon grease or olive oil to the pan.

Season the chicken thighs with a generous amount of salt and pepper to taste on both sides, and lay them skin side down into the heated skillet.

Sear the chicken for 5 minutes on each side, and then remove from the skillet.

To the same skillet, add the chopped vegetables. Saute for about 5 minutes until the vegetables begin to become tender.

Pour the white cooking wine into the skillet with the vegetables, and saute until most of the liquid has been reduced.

Add the heavy whipping cream and broth to the skillet, and stir to combine.

Sprinkle the chopped parsley and rosemary into the skillet as well as more salt and pepper to taste.

Place the chicken back into the skillet, and cook until the chicken is no longer pink in the center, and the sauce has thickened.

If there are leftovers, you can store the chicken (along with the sauce) together in an airtight container. Make sure to keep it refrigerated.

Ingredients

  • 4 Bone in skin on chicken thighs
  • 2 tablespoons bacon grease (if available) or olive oil
  • 1 large carrot, peeled and chopped
  • 2 stalks celery, chopped
  • 1/2 medium onion. chopped
  • 1/2 cup white cooking wine
  • 1 cup heavy whipping cream
  • 1/2 cup chicken or bone broth
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons chopped fresh rosemary
  • Salt and pepper to taste

Instructions
