When I’m in the mood for a set-it-and-forget-it dinner, Keto Crockpot chicken is one of my go-to options! The chicken turns out so tender while the spices, Rotel, and salsa make it super tasty.
Best of all, you simply add the ingredients to the slow cooker, then let it cook for about eight hours. It truly couldn’t be easier.
Plus, unless you’re feeding a crowd, you’ll likely have plenty of leftovers. I love using this recipe to make dinner for one night while also meal-prepping for the rest of the week!
Is It Better To Cook Chicken On High Or Low In The Crockpot?
When you’re using chicken breasts, I always recommend cooking them on low. This is a very lean cut of meat, so if you cook them on high, they can turn out too dry.
I recommend leaving the chicken breast in the slow cooker on low for about eight hours. That means you can throw everything in the Crockpot in the morning, let it work its magic during the day, and then you’ll have tender chicken ready to serve for dinner!
Can You Use Chicken Thighs Instead Of Chicken Breast?
If you prefer a higher fat content, you can absolutely use chicken thighs instead of breasts! The result will still be absolutely delicious.
Chicken thighs are a little smaller, so you likely only need to cook them for about six hours on low instead of eight. However, if you try shredding the thighs and they are too tough, let them keep cooking until they are tender.
What To Serve With Keto Slow Cooker Chicken
This dish is packed with wonderful Mexican-inspired flavors thanks to the spices and the salsa. So, naturally, I love using that flavor profile to inspire the rest of the meal!
For example, taco bowls and burrito bowls are always a hit. Just top the chicken with all your favorites, like shredded lettuce, chopped tomatoes, pico de gallo, guacamole, diced jalapeños or bell peppers, all that goodness.

Can You Store Crockpot Chicken?
Absolutely! With eight servings, this is a great recipe for meal-prepping.
Simply allow the shredded chicken to cool to room temperature, then store in an airtight container in the refrigerator. Cooked chicken should be eaten within about four days.
When you’re ready to enjoy, you can reheat gently in the microwave or in a pan on the stovetop. I also think shredded chicken is great cold, so you can even eat it straight from the fridge!
How To Make Keto Crockpot Chicken
Place the chicken breasts into the bottom of a crockpot. Top with salt and pepper to taste.
In a bowl, combine the chili powder, cumin, oregano, and paprika.
Sprinkle the seasoning mixture over the chicken.
Layer the onion, celery, and carrots on top of the chicken.
Add the water, Rotel, and salsa to the crockpot.
Close the lid and cook on low for 8 hours.
Shred the chicken. If you’re using sour cream, stir it in at this point.
Serve immediately.

Ingredients
- 6 chicken breasts
- 1-2 tablespoons keto taco seasoning
- 4 carrots chopped
- 4 celery chopped
- 1 onion chopped
- 1 cup petite diced tomatoes
- 1 cup hot salsa
- 1/2 cup water
- 1/4 cup sour cream
Instructions
- Lay chicken in the bottom of the crockpot and top with taco seasoning.
- Cut, chop, dice (whatever you fancy) the carrots, celery, and onion and add to the crockpot.
- Add tomatoes, salsa, and water.
- Cover and cook on low for 8 hours or, really, however long you want at whatever temperature you want so long as the chicken cooks!
- When done, shred the chicken (still in the crockpot) with 2 forks. Add sour cream and mix well.
- Serve
