Dorito Chicken Casserole
If you like to cook the way I do — and by that, I mean simple dishes that are big enough for the whole family to devour and still have leftovers — then you probably love casseroles. They are the busy weeknight go-to!
I learned a long time ago that melty cheese is the key to getting even the pickiest eaters to devour broccoli. That’s the secret behind my Keto broccoli casserole.
But one night, I found myself wanting to tweak this classic. I decided to add some chicken for protein, but I also wanted to give it a fun twist.
And that’s how this delicious Dorito chicken casserole was born!
Okay, okay, it doesn’t use ACTUAL Doritos. But based on the taste and the crunch, you’d never be able to tell the difference. Plus, the name alone makes my kids want to dive right in.
So how do we achieve a faux-Dorito topping? The answer is super simple: we use Moon Cheese!
What Is Moon Cheese?
If you haven’t heard of Moon Cheese, this product swept the low-carb community a few years ago. It was one of the first Keto-friendly snacks you could buy almost anywhere.
In fact, Moon Cheese is just cheese. Seriously, that’s it.
The company uses a special dehydrating process that involves both heating and vacuum-drying the cheese. This sucks all the moisture out of the cheese, leaving us with a delicious and crunchy bite-sized snack.
Each piece is round with little divots and craters. That’s where we get the name “Moon Cheese!”
And it is PERFECT for a faux-Dorito casserole topping.
What Kind Of Chicken Should I Use In This Casserole?
Is it just me, or do some of the best dishes come together because you needed to use up things in your fridge? Leftovers for the win!
Part of the inspiration for this recipe came from some leftover shredded chicken I had that I didn’t want to waste. With that being said, really any kind of chicken should work.
You could meal-prep a big batch of shredded chicken to use throughout the week, or just buy a rotisserie chicken from the grocery store and shred the meat. Even canned chicken would work just fine.
If you have the chicken made ahead of time, then this Keto chicken casserole comes together in a snap.
What To Serve With Dorito Chicken Casserole
This dish really has everything.
Protein? Check. A hearty serving of veggies? Check. Plenty of cheese? Check. A crunchy topping with an extra burst of cheesy flavor? Check and CHECK!
So you can keep it pretty simple with your sides. Some cauliflower potato salad is a nice way to add even more veggies, or you could throw together a simple salad.
Can You Store Leftover Dorito Chicken Casserole?
Of course! That’s the joy of casseroles, right?
Simply let the casserole fully cool to room temperature, then store in an airtight container in the refrigerator.
I usually try to eat leftovers within three or four days. However, if the leftover chicken has already been sitting in your fridge for a few days, then I recommend eating the rest of this casserole within a day or two.
How To Make Dorito Chicken Casserole
Preheat the oven to 350 degrees.
Blanch the broccoli in boiling water for 5 minutes, then drain completely.
In a well-greased 9×9 baking dish, mix together the shredded chicken and broccoli.
Add the heavy whipping cream, broth, chili powder, cumin, garlic powder, salt, and pepper to a saucepan over medium heat on the stove. Simmer until the sauce has thickened.
Stir the shredded cheese into the sauce mixture and whisk until the cheese has melted.
Pour the cheese sauce over the chicken and broccoli in the casserole dish.
Add the Rotel to the casserole dish, then stir until everything is well combined.
Top the casserole with the Moon Cheese crumbs.
Place in the oven and bake for 30-35 minutes.
Garnish with fresh chopped green onions if desired before serving.

- ½ cup chicken broth
- 1 teaspoon chili powder

- 2 bags Cheddar moon cheese crushed into crumbs
- Salt and pepper to taste
