Keto Chicken Tortilla Soup
Soup is one of my favorite things to make. Not only are there a TON of amazing keto soups to choose from, but they fit into any eating lifestyle! And not only that, but they make a great meal prep dinner for the week.
This keto chicken tortilla soup makes a generous 6 portions. Depending on the size of your family, you can make this ahead of time, double the recipe if needed, have it for dinner and then package it up for lunches for the rest of the week!
Keto Tortilla options
There are a variety of low carb tortilla options to buy in the store. You can also make your own if you prefer to do so. I have two options that you can choose from. The first is this keto pita bread and the second is the tortilla portion of this keto enchilada recipe.
Any of these will work beautifully.

They certainly are. As we just discussed you have a lot of options for just how to make sure the tortilla strips you use are keto-friendly. I do tend to make my own, but sometimes buying them in the store is convenient!

What is Rotel?
I LOVE Rotel! It is so easy to use and the flavor options are out of this world. Basically, Rotel is diced tomatoes with green chilis and spices. It beats having to do it all on your own. I use it in this soup, obviously, but I also use it in other sauces and chili!

How to Make Keto Chicken Tortilla Soup
Are you ready to dive into how to make this yummy keto chicken tortilla soup? Make sure to scroll down to the recipe card where you’ll find all the ingredients and a print button!
First, you will want to melt the butter in a pot over medium heat.
To the pot, add the onions, peppers and jalapenos. Saute until tender.
Add the minced garlic, chili powder, cumin, paprika, oregano, lime juice and salt and pepper to taste. Mix well.
Add the Rotel and chicken, mix well.
Finally, add the chicken broth and cover.
Reduce the heat to medium low and simmer for 20 minutes.
Heat the oven to broil. Place tortilla on a baking sheet, flipping it every so often until browned and crispy.
Cut the tortillas into strips. Serve the soup with strips of tortilla on top.

Ingredients
- 2 tablespoons butter unsalted
- ½ onion chopped
- ½ red bell pepper chopped
- 2 Jalapenos deseeded and finely chopped
- 2 teaspoons minced garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- ½ teaspoon chili powder
- Squeeze of fresh lime juice
- 1 can Rotel undrained
- 3 cups shredded chicken breast
- 5 cups chicken broth
- Salt and pepper to taste
- 1 large or two small low carb tortillas
Instructions
- Melt the butter in a pot over medium heat.
