I don’t know about you, but I LOVE English muffins. When I transitioned to keto years ago, there were a few things that I desperately missed. English muffins were on top of the list.
Enter….. KETO English Muffins! These quick and easy English muffins are just the thing to satisfy that craving and fit into a busy morning!
I really enjoy mug cakes because they only take a few moments and clean up is a breeze. Usually people think of mug cakes as sweet desserts. But not all of them are! This mug cake is a savory delight!
How to Make Keto English Muffins
In a bowl, add almond flour, baking powder, dill and garlic powder. Mix well.
Add egg and heavy whipping cream to the bowl and continue mixing.
Pour batter into a greased ramekin (or mug) and microwave 90 seconds.
Remove from ramekin, slice and toast (if desired).
What is the Consistency of These Muffins?
As with most mug cakes, these are light, fluffy and spongy. Not spongy in a bad way, but spongy in a good way!
Don’t like spongy? Toast ’em!
But seriously, the consistency is fantastic with these, especially if you toast them.
Can I Toast These Keto English Muffins?
YES! In fact, that is my preferred way to eat them. As much as I love mug cake style breads, they can tend to be a little spongy. So toasting them is the perfect way to crisp them up and even give them a bit more flavor. Don’t ask me how, it just happens!
I cut mine in half, toast it, and lather it with butter or keto blueberry jam.

There are so many topping choices, but here are just a few:
Good old fashioned BUTTER
Low carb peanut butter
Meats and cheese
And the list goes on. I have not tried cream cheese, but that is going to be the topping I try the next time I make these keto English muffins.
Can I Make These Ahead of Time?
You sure can. I prefer to make them on demand since they are so simple and they taste fresher.
But if you must, you can certainly make them a day or two ahead of time! Just make sure to store them in an airtight container in the fridge and cool them down completely before storing in the fridge.
What Type of Cup to Make Keto English Muffins in
I make them in ramekins or coffee mugs. The beautiful thing is that it doesn’t matter. As long as it is microwave safe, you can use whatever style of mug you want. Using different types of mugs can also help with creating different size low carb English muffins.

I don’t think I have ever gone to the kitchen and prepared a recipe so quickly after it appeared online but I miss toasted bread! I was pleased with my results but will experiment a bit more to get the size I want.
Toasting is a must for the true experience of delight!
I question the amount of garlic, even if used for a savory sandwich. An 1/8 of a teaspoon was good enough for me.
I thought my first muffin cried for salt. I made a second with 1/4 teaspoon of salt and that was tastier to my palate.
I was surprised by the dried dill. It adds to the flavor but you can’t distinguish it so be sure to use it.
