Low Carb Waffles
Waffles are one of those perfect breakfast foods as well a perfect “breakfast for dinner” foods.
All those delightful little pockets to hold a variety of toppings, syrups, berries, you name it!
Low Carb waffles are a favorite in my house. Specifically, gluten free waffles that are ALSO low carb. My household is a gluten free house where most foods are keto and low carb. I practice cyclical keto so not every day is a low carb day, but most.
This recipe is one of those recipes, though, that will satisfy the low carb crowd AND the high carb crowd. BONUS.

Alright, so let’s have a quick discussion about how to make these lovely waffles. Full recipe is at the bottom of the post in the recipe card.
How to Make Low Carb Waffles
Add all ingredients to a blender or a food processor and blend until well mixed.

Preheat waffle iron as batter rests.
Following the instructions for your waffle maker, add batter to the waffle maker. Again, follow waffle make instructions for baking!

Serve with topping of choice!

Do These Low Carb Waffles Taste Eggy?
No, they most certainly do not. To me, there is almost nothing worse than a keto baked item tasting eggy.
Having said that, eggs do play an important role in recipes such as waffles. Especially in gluten free waffles. Gluten provides a lot of structure and eggs really make up for part of what you lose when you take out gluten.
Eggs will hold everything together and also help the batter to rise and get fluffy during cooking.
Can I Make These in a Chaffle Size?
You totally can! Just follow your waffle maker instructions and you are good to go! These will work with most waffle makers.

Can I Reheat These Waffles?
You definitely can reheat waffles. They may be slightly mushier than when they were first freshly made. But they will still taste lovely.
