Keto Creamy Chicken with Sage and Spinach
I think there’s a misconception that following a Keto diet means scarfing down bacon and cheese for every meal. Okay, sure, I love bacon and cheese… but I also love lean protein and veggies.
Keto creamy chicken with sage and spinach strikes the perfect balance! This dish tastes so indulgent, it’s hard to believe it’s actually good for you.
Butter, heavy whipping cream, and cooking wine come together for an indulgently-creamy sauce you’ll want to eat like soup. Add the wilted spinach, coat the chicken breast, and get ready to devour.
Best of all, the whole thing comes together in one pot on the stove! That means easy prep and fast clean-up for an oh-so-delicious and healthy meal. What can be better than that?
Cooking The Chicken
Chicken is obviously a very big part of this recipe. So, we want to make sure we cook it just right!
For this recipe, I don’t pound the chicken breasts. Pounding is a useful technique when we’re cooking whole chicken breasts so they cook evenly, but because we’re cutting our breasts into chunks, we don’t need to bother.
Next, you want to make sure you cut the chicken into even pieces. They don’t need to be EXACT or anything, no need to break out the ruler… but again, we’re just trying to ensure even cooking. It’s up to you how big the pieces are.
The final step is sautéing our chicken chunks until they’re golden on the outside and cooked through on the inside. Chicken is done when it reaches an internal temperature of 165°F.
If you cut the chicken into 1 inch pieces, you’ll probably want to cook them for 8-10 minutes, stirring occasionally. If the pieces are bigger, make sure to cook them longer.
Dairy-Free Recipe Variation
Want to make this recipe without the dairy? No problem! The only dairy in our creamy chicken comes from the heavy whipping cream and the butter, which are easy to swap out.
Ghee, or clarified butter, is not technically dairy-free because it’s a butterfat. However, it IS lactose-free, so it’s commonly used as a butter replacement. Alternatively, you could replace the butter with your favorite oil.
Next, to swap out the heavy whipping cream, I recommend coconut milk. It can be used as a 1:1 replacement, plus it will add a lovely hint of coconut flavor to your dish!
What To Serve With This Meal
For me, this dish is all about that indulgent sauce. So, when I’m thinking about sides, I usually want some kind of bread to sop up anything that’s left on my plate!
One of my favorite’s has to be Keto focaccia. The rosemary olive oil and tomato flavors will be so delicious with our creamy chicken.
Or, for a simpler option, you can’t go wrong with Keto rolls. They’re so perfectly fluffy!
Looking for a little more green? Roast up some garlic Parmesan asparagus while your sauce simmers on the stove. A simple side salad always works, too.
Can I Store Low-Carb Creamy Chicken?
You bet! And, trust me, you’ll be so happy you have leftovers to enjoy later in the week.
Simply transfer any creamy chicken you have left to an airtight container. Allow it to cool fully before sealing, then store in the refrigerator for up to four days.
How To Make Keto Creamy Chicken with Sage and Spinach
Heat the oil in a skillet over medium-high heat. Season the chicken with salt and pepper to taste, then add to the heated skillet.
Sauté the chicken until cooked through, then remove and set aside to keep warm.
Melt the butter in the skillet over medium heat. Add the onions and sauté until they start to become tender.
Add the garlic, dried sage, and fresh parsley. Sauté another 30 seconds.
Pour in the cooking wine and continue cooking until the liquid is reduced by half.
Whisk in the heavy whipping cream. Continue to simmer until the sauce starts to thicken.
Add the spinach to the skillet.
Cover with a lid and cook until the spinach is wilted.
Transfer the chicken back into the skillet.
Stir until the chicken is well-coated, then remove from heat and serve.
