Keto Vanilla Buttercream Icing
In my experience, there are two types of people in this world: ones that eat cake because they love the actual cake, and ones that use cake as a vehicle to eat the icing!
Whichever camp you fall into, you simply have to try this Keto vanilla buttercream icing. For Team Cake, it will only enhance your dessert. For Team Icing, you might find it hard to resist eating this buttercream straight from the bowl!
Personally, my favorite part about this recipe is the fact that you only need four ingredients and about five minutes to make it. It’s so simple, but the result is unbelievably rich and silky.
Plus, the texture is also spot on. Whether you’re spreading it over a cake with a butter knife or piping it onto cupcakes for a professional finish, this icing is sure to impress both the eyes and the taste buds!
What Ingredients Are In Low-Carb Buttercream Icing?
One of my favorite parts about this recipe is that you only need four ingredients to make it. That’s right, FOUR. And there’s a good chance you already have all of them in your kitchen.
First, you’ll need one stick of butter. Probably pretty obvious, given the name. I recommend using unsalted butter and either softening it in the microwave or letting it sit at room temperature.
Next, we want a low-carb confectioners sweetener. I like to use Swerve Confectioners, but if you already have granulated sweetener on hand, that’s no problem! Just toss it in the blender and pulse until the sweetener is powdered.
Third, we want vanilla extract. This gives our icing its wonderful flavor.
Finally, we need some heavy whipping cream. That’s how we put the “cream” in “buttercream.”
And that, my friends, is all you need! With four simple ingredients and five minutes, you’ll have delicious Keto icing to top your favorite desserts.
Can You Double This Recipe?
Absolutely. You can even triple or quadruple it if you need!
As long as everything fits in your mixing bowl, you’re all good. And if you need more icing than that, you can always make multiple batches.
So whether you’re icing several dozen cupcakes or making an epic cake for a special occasion, it’s super easy to adjust this recipe to fit your needs. And hey, if you happen to run out, you can always make more in about five minutes flat!
What To Serve With Keto Vanilla Buttercream
Let’s be honest here… I have DEFINITELY eaten this icing straight out of the bowl with a spoon. It’s so creamy and delicious, it’s hard to resist! But it also makes a fantastic topping for all your favorite desserts.
Looking for a classic vanilla-on-vanilla combination? Use this buttercream in place of the cream cheese icing in my Keto vanilla cake recipe. Keep the pink food coloring to add a pretty pop of color.
You could also swap out the icing in these Keto Cupcakes for buttercream icing. Or, for an extra special treat, use my Keto Cream Filled Cupcakes as the base.
