I love simple keto meals.  I'm going to put that out there!  The simpler the better.  And the best ones are simple AND tasty!

This keto lemon cream chicken consists of 3 basic parts: shredded chicken, lemon cream sauce, and steamed veggies.  And that is it.

My hubby often puts hot sauce on pretty much everything.  Literally everything.  I am happy to report that my lemon chicken did NOT require the use of hot sauce.  SCORE!

Is lemon keto friendly?

It sure can be!  Lemon actually has some great benefits for the body as well as benefits for the body in ketosis!

BUT, this recipe gets the lemon from lemon pepper seasoning, so you need not worry about any high carb content!

What should I serve with lemon chicken?

The beautiful thing about this recipe is that the veggies are included!  So you get your fat, protein, and veggies all in one!

How to make lemon cream sauce

You are in for a treat because the lemon sauce is SO EASY!

You literally just add the heavy whipping cream, cheese and lemon pepper seasoning in a saucepan over medium-low heat for about 20 minutes and BOOM - the sauce is complete!

How to make shredded chicken

Yet another simple step.  And it is a great skill to have for meal prep!

You simply throw a few chicken breasts into a crockpot with some chicken broth or stock and cook on low heat for about 6 hours.  The broth helps keep is moist and it won't dry out.

You have a few options once it is done cooking depending on the recipe.  You can either remove the chicken, discard the broth and then shred the chicken outside the crockpot, or you can shred the chicken in the broth and let more broth soak in.

Putting it all together

You cook the shredded chicken, get started on the sauce, and steam the veggies while the sauce is cooking.  Then mix it all together and serve!

Keto Lemon Cream Chicken

Ingredients

  • 3 cups shredded chicken (about 2 pounds)
  • 1/2 cup chicken broth
  • 3 cups broccoli and cauliflower florets
  • black pepper to taste
  • sea salt to taste

Lemon Cream Sauce

  • 2 cups heavy whipping cream
  • 1 1/4 cup shredded 4 cheese blend (Parmesan, Asiago, Ramona, Fontina)
  • 3 teaspoons lemon pepper

Instructions

  1. Add chicken breasts and chicken broth to a crock pot.
  2. Cook on low for 6 hours.
  3. Remove chicken from crock pot and discard broth. Shred chicken and set aside.
  4. Combine heavy whipping cream, cheese and lemon pepper seasoning to a sauce pan.
  5. Cook on medium-low for 20 minutes, stirring often.
  6. When there is about 10 minutes cooking time left on the sauce, start steaming veggies.
  7. Add chicken and veggies to cream sauce and mix well. Add salt and pepper to taste and serve!
