We were having a special celebration in our house tonight and I wanted to make a nice dinner for my husband and kids.
My husband is not a big fan of chicken breasts because they tend to be dry. He likes chicken thighs. I am not a huge fan of chicken thighs because I don’t like the consistency of the fat. I know, I know, I should love it since I’m Keto, but I don’t!
SO…. I used chicken breasts, cut them into smaller pieces and made sure to add something to make them NOT dry – hence the salsa. Don’t skip the salsa – it makes all the difference.
My family LOVED this meal and wished I had made double the keto gnocchi – I will next time!
Kitchen Essentials
You are in luck! You only need a few essentials for this recipe!
Frying pan – I used two actually, but you could get away with just one!
Wok – I love using woks for meals that are combined at the end! Less mess, fewer spills and nice high sides to mix!
Large Pot – This is for the gnocchi! You need a nice large pot to cook them in (or a small pot with multiple batches)
Special Notes
The great thing about this recipe is that you can give a big scoop from one pan and there is your dinner! I love one pot meals, even if they don’t start out in one pot.

Ingredients
- Gnocchi Recipe
- 1.5 pounds chicken breasts cut into chunks
- 1/2 red pepper diced
- 1/2 green pepper diced
- 1 bunches asparagus cut into 1 inch slices
- 2 tablespoons olive oil
- 1/4 teaspoon pepper
- 1 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 cup keto approved salsa
Instructions
- Cook Garlic Gnocchi according to instructions, keep warm.
- Saute chicken in large pan or wok for about 10 minute.
- Meanwhile, warm olive oil in a separate pan. Add vegetables and saute for 10 minutes as well.
- Add vegetables, spices, and salsa to large pan with chicken. Mix well and continue cooking until chicken is done.
- For the last minute, add garlic gnocchi and mix well with chicken mixture.
- Serve warm!
