How to Make This Lemon Thyme Roasted Chicken

Preheat the oven to 425 degrees. 

Add all of the ingredients to a Ziploc bag and shake to combine. 

Marinate the chicken in the bag for at least 30 minutes before cooking.  Place the marinaded chicken into a 9x13 baking dish and pour the remaining marinade over the chicken.  

Bake for 30-35 minutes until browned and completely cooked through.

If you have leftover Thyme Roasted Chicken, be sure and refrigerate it within 2 hours of it sitting out at room temperature. 

Place the leftover chicken in an airtight container in the fridge. Be sure to label the container with the contents and date and be sure and consume within 3-4 days. 

If you won’t be using the chicken before the first 3 days, you can store it in the freezer. To accomplish this, remove the chicken from the bones, shred it, and place it in an airtight container.

  • Wash the chicken and pat it dry before marinating.
  • Allow the chicken to rest after removing it from the oven.  (To rest a chicken, take the chicken out of the oven and place it on a plate or cutting board. Let the chicken “rest” on the cutting board or plate for 10-30 minutes).
  • Use a thermometer to ensure the chicken has reached a safe cooking temperature. 
  • Do not overcook the chicken. Let's face it, chicken is one of the most overcooked meats out there!

Ingredients
  

  • 4 bone in and skin on chicken thighs
  • 2 tablespoons olive oil
  • 3 teaspoons minced garlic
  • 4 tablespoons sugar free honey
  • Juice from ½ a lemon
  • 2 teaspoons dried thyme
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions
