Single Serve Keto Pizza

Who knew pizza could be such a wonderful part of a Keto diet? 

Probably not most of us when we first heard of Keto. But here we are, loving pizza and eating it totally guilt-free!

If you’ve seen my Perfect Keto Pizza recipe, you know how much work (and by work, I definitely mean testing and eating pizza) went into my quest to find my perfect version of fathead pizza crust.

In case you’re not familiar, I’ll let you in on my secret: a seasoned butter layer baked right into the top of the crust! Yes, it’s exactly as delicious as it sounds.

So of course, these single serve Keto pizza crusts also have the butter layer. I will never make my pizza crusts without it! 

But I really wanted to find a way to enjoy pizza without needing to make a WHOLE pizza. Sometimes, you’re only cooking for one, and cooking a whole pizza means you either end up with tons of leftovers OR you eat way more than you wanted to.

Or maybe you’re cooking for the family, but everyone wants to be in charge of their own toppings. In this case, keto single serve pizzas makes everything easy! 

Personally? I like to make extras so I can have Keto pizza ready to go anytime. After all, you never know when that pizza craving will strike.

Can I Freeze These Single Serve Keto Pizza Crusts?

YES! In fact, I do this all the time. They keep very well in the freezer, and it’s so convenient having them pre-made and ready to go.

Simply bake the crusts, allow them to cool, then wrap them tightly or vacuum seal them to freeze.

You will freeze the crusts plain, not with the toppings. Toppings go on once you’re ready to eat!

Meal Prepping With Keto Pizza

Let’s face it: lunch can be hard. 

Whether you’re on the go in the middle of the day or working with a short lunch break, you may not have as much time to cook as you do for dinner.

That’s why I LOVE using single serve Keto pizzas for my lunchtime meal prep! 

I double the recipe, eat one of the pizzas, then freeze the other 5 in vacuum sealed bags.

Whenever I want pizza for a quick meal in the future, I simply pull one of the crusts out, let it thaw, then add my toppings of choice and bake!

What Toppings Go Well With These Keto Pizzas?

If you can dream it up, it will probably be delicious on this pizza.

I like to use my Homemade Keto Pizza Sauce as the base and top with shredded mozzarella and pepperoni! Perfect, simple, and so tasty. Sausage and veggies make great toppings too.

Or, you could whip up a batch of my Keto Pesto as the base and top with shredded chicken and a blend of cheeses. How good does that sound?

The pizza possibilities are endless. And with these little single serve pizzas, you have the freedom to get creative!

How To Make Single Serve Keto Pizza

Start by prepping the Homemade Keto Pizza Sauce per instructions, then set aside when complete. You can make 1/2 a batch if you wish, but I always make a full batch and use the leftover sauce for other dishes!

Next, preheat the oven to 425 degrees F.

Keto Single Serve Pizza

In a medium bowl, combine the beaten egg, almond flour, garlic powder, onion powder and Italian seasoning. Set aside.

In a small microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in 30 second increments for a total of 90 seconds, stirring in between. Alternatively, you can melt the cheeses over the stove if you prefer.

Combine the cheese mixture with the egg and flour mixture.

Test that the mixture is not too hot to handle. Once it’s cool enough to touch, squeeze the dough through your fingers to combine. The mixtures may feel like they don’t want to combine, but just keep working them together and eventually, they come together quite nicely.

Place the dough in the refrigerator for 10 minutes to cool. It’s a bit sticky when warm, so chilling will make it easier to work with.

After chilling, separate the dough into 3 equal dough balls.

Spray 2 sheets of parchment paper with avocado oil (or whatever spray you have), then place dough balls one-at-a-time between the papers and roll out to your desired shape. I stick with rough circles, but a square would be fine too.

Roll in the edges to make a slightly thicker edge, then place pizza crusts on a baking sheet lined with parchment paper. 

In a small bowl, combine the melted butter and Italian Seasoning. Paint the mixture onto crusts. This is your seasoned butter layer!

Place the crusts in the oven and bake for 10-13 minutes, checking on them often. If you see a bubble forming, poke it with your fork. 

Once they are lightly golden with a few brown spots, they are ready. Remove from oven and reduce the temperature to 350 degrees.

Now, add the sauce, more mozzarella cheese, and your toppings of choice! Bake for 8 more minutes to melt the cheese, then serve!

Ingredients
  

Pizza Crust

  • 1 1/2 cups low moisture shredded mozzarella cheese
  • 2 ounces cream cheese
  • 3/4 cup almond flour
  • 1 egg beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter melted
  • 2 teaspoons Italian seasoning

Sauce

Toppings

  • Whatever toppings you want! Some choices are veggies sausage, ground beef, and pepperoni!

Instructions
 

  • Prepare sauce per instructions and set aside when complete. You can make 1/2 a batch if you wish, but I always make a full batch and use the leftovers for other things!

  • Add cheese mixture to egg mixture.
  • Using your hands (be mindful that it is hot and do not burn your hands), squeeze the dough through your fingers to combine. It will feel like it won’t combine, but eventually it will.
  • Put in the refrigerator for 10 minutes to cool. It will be sticky when warm.
  • Separate dough into 3 equal dough balls.
  • Spray 2 sheets of parchment paper with avocado oil (or whatever spray you have). Place a dough ball between the papers and roll out dough to a rough circle (or square).
  • Roll in edges to make a slightly thicker edge. Repeat for remaining dough balls.
  • Place pizza crusts on baking sheet lined with parchment paper.
  • In a small bowl, combined melted butter and Italian Seasoning and paint onto crusts.
