What Vegetables Should We Not Eat on Keto

Many people think that vegetables are always healthy, but that is not the case with keto. It is important to know what the carb count of a vegetable is before you eat it and some vegetables are surprisingly high in carbs.

When following a keto diet, a good rule of thumb is to consume MINIMALLY 12 to 15 grams of carbs from vegetables daily. The following is a list of higher carb vegetables that you should avoid while on keto:

  • Potatoes (all varieties, including sweet potatoes)
  • Yams
  • Peas
  • Corn

Can These Keto Stuffed Peppers Be Made in the Instant Pot or Air Fryer?

If you don’t want to heat up your oven or if you don’t have access to an oven for whatever reason, you can easily make these in the air fryer.

Air Fryer Keto Stuffed Peppers

Preheat your air fryer to 400 degrees. Place 2-4 prepared stuffed peppers into the basket of your air fryer and cook for 10 to 15 minutes. Turn them at the 7 and 1/2 minute mark.

What to Serve with These Keto Stuffed Lasagna Peppers

This keto stuffed pepper recipe is perfectly delicious on its own, but there are also some great sides that you can serve it with.  Here are some of my favorites:

Caesar Salad

Caesar Salad is a delicious side dish for this brilliantly flavored stuffed bell peppers. Not all Caesar salads are created equally though so be sure and make your own to insure that it is keto friendly!

Cauliflower Rice

Cauliflower rice makes such a great side dish for almost any meal, but it’s really good with these stuffed peppers as its mild flavor doesn’t overpower the peppers.

Roasted Veggies

It’s never a bad idea to add more healthy vegetables to your diet, right? Delicious roasted veggies tossed in oil and sea salt make a great side dish for this recipe.
