I love how little this recipe requires! The bold flavors in this recipe might make you feel like you have to work very hard to make it, but it really requires very little:
How to Make This Keto Stuffed Pepper Recipe
Heat the oven to 400 degrees and grease a 9x13 baking dish.
Place the cut peppers into the prepared baking dish and bake for 15 minutes.
Meanwhile, saute the Italian sausage in a skillet over medium high heat until cooked through. Make sure to drain the excess fat.
Pour the marinara in with the cooked ground sausage and stir to combine. Set aside.
In a medium mixing bowl, blend together the ricotta, cottage cheese, 1 cup of mozzarella, Italian seasoning, garlic powder, egg, parmesan cheese and salt and pepper to taste.
Remove the peppers from the oven and drain any moisture that may have accumulated in them. You can just pour it out carefully.
Spread a spoonful of the cheese mixture into the bottom of each of the pepper halves.
Top the peppers with the meat mixture.
Sprinkle with the remaining mozzarella cheese.
Bake for another 15-20 minutes or until the peppers are tender.

Preheat your air fryer to 400 degrees. Place 2-4 prepared stuffed peppers into the basket of your air fryer and cook for 10 to 15 minutes. Turn them at the 7 and 1/2 minute mark.

- ½ pound ground Italian sausage
- 3 small bell peppers, cut in half lengthwise and hollowed
