Ingredients
  

  • ½ pound ground Italian sausage
  • 3 small bell peppers cut in half lengthwise and hollowed
  • ½ cup ricotta
  • cup cottage cheese
  • 1 ½ cups shredded mozzarella cheese divided
  • ½ cup low carb marinara sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 large egg
  • ¼ cup Parmesan cheese grated
  • Salt and pepper to taste

Instructions
 

  • Heat the oven to 400 degrees and grease a 9x13 baking dish
  • Place the cut peppers into the prepared baking dish and bake for 15 minutes.
  • Meanwhile, saute the Italian sausage in a skillet over medium high heat until cooked through.
  • Make sure to drain the excess fat.
  • Pour the marinara in with the cooked ground sausage and stir to combine. Set aside.
  • In a medium mixing bowl, blend together the ricotta, cottage cheese, 1 cup of the mozzarella, Italian seasoning, garlic powder, egg, parmesan cheese and salt and pepper to taste.
  • Remove the peppers from the oven and drain any moisture that make have accumulated in them. You can just pour it out carefully.
  • Spread a spoonful of the cheese mixture into the bottom of each of the pepper halves.
  • Top the peppers with the meat mixture.
  • Sprinkle with the remaining mozzarella cheese.
  • Bake for another 15-20 minutes or until the peppers are tender.
