So there’s this fathead dough thing, right? I’m pretty sure most of us know what fathead dough is.
It is a pretty standard recipe that many recipe creators have used, modified and enjoyed using as part of their creations.
What some people might NOT understand is how absolutely versatile this dough is and how you can make bland things, savory things, sweet things, just about any flavored “thing” there is!
I wanted to create this article to outline my simple approach for using fathead dough and how YOU can use it in your everyday recipes as well.
Let’s start with some super simple additions that you make to the base fathead dough recipe to create some (still simple, yet) lovely dough.
Savory Keto Dough Spice Blend
Mmmm…. Savory. i.e. not sweet!
My standard addition to the keto savory dough is to add:
- 1/8-1/4 teaspoon garlic powder
- 1/8-1/4 teaspoon onion powder
- 1 teaspoon Italian Seasoning (optional)
I love how the 3 of these work together. Garlic and onion are just my favs and the Italian seasoning is this versatile blend that goes well with bread and doughs.
Sweet Keto Dough Option
I definitely don’t go crazy with this one. The absolutely beautiful thing about fathead dough is that it is so easy to turn savory OR sweet. It is like this amazing tasting neutral base that is just waiting for just a little something extra!
So for the sweet keto dough, I simply add:
- 1 tablespoon low carb sweetener
On occasion, I’ve been known to throw a touch of cinnamon in there!
How To Make the Base Keto Dough
Alright, let’s get down to the basics and talk about how to make this wonderful keto fathead dough! The original dough, that is.
For the base dough, we have:
1 1/2 cups low moisture, shredded mozzarella cheese
2 ounces cream cheese
3/4 cup almond flour
1 egg, beaten
Instructions:
In a medium bowl, combine beaten egg and almond flour and set aside.
In a small microwave safe bowl, combine Mozzarella cheese and cream cheese. Heat for 60 seconds, stir and heat for about 30 more seconds. You can melt over the stove if you wish as well.
Add cheese mixture to egg mixture.
Using your hands, squeeze the dough through your fingers to combine. The cheese will be hot, so be careful not to burn yourself.
It will feel like it won’t combine, but it really will.
Put the dough in the fridge for 10 minutes to cool.
Now, what you do with it after that all depends on what you are making! But it usually involves baking at 350 for a certain period of time!

How To Make Keto Pizza With Savory Dough Option
You have 2 options. You can make one pizza or you can make 3 single serve pizzas. I like to make one larger keto pizza when I am making dinner and then I make the 3 single serve keto pizzas as a meal prep for weekly lunches.
The dough freezes very well if you bake it and then freeze it before putting the toppings on.

Ingredients:

How To Make Keto Cinnamon Rolls With Sweet Dough Option
This is my top sweet variation of keto dough! I mean, who doesn’t love cinnamon rolls?
I have to admit that the first time I heard about people making cinnamon rolls with fathead dough, I was a bit put off. I mean, how in the world can you make cheese taste like sweet delights?
Well, my keto friend, let me tell you – it is EASY!
Below is how!
Ingredients:
- 1 1/2 cups shredded mozzarella cheese
- 2 ounces cream cheese
- 1 egg, beaten
- 3/4 cup almond flour
- 1 tablespoon Lakanto monkfruit sweetener
- 1 1/2 teaspoons baking powder
- 1/8 teaspoons xanthan gum

How to Make Keto Rolls With The Savory Dough Option
I have to say that the keto rolls recipe was the one I’m most proud of. I haven’t seen another like it, but I’m sure they are around!
Very similar to the keto pizza, but a few differences. Namely, baking powder and baking at a different temperature. And yes, a different baking temperature can make a HUGE difference in the end result
Ingredients:
- 1 1/2 cups low moisture, shredded mozzarella cheese
- 2 ounces cream cheese
- 3/4 cup almond flour
- 1/4 cup oat fiber
- 1 tablespoon baking powder
- 1/8-1/4 teaspoon garlic powder (depending on taste)
- 1/8-1/4 teaspoon onion powder (depending on taste)
- 1 egg, beaten

- 1 tablespoon low carb sweetener easy peasy
Just For Fun
- Add in some chives for the savory option
- Give a sprinkle of cinnamon for the sweet option

- In a medium bowl, combine beaten egg, almond flour and add on options (ex, sweet or savory version). Set aside.
- In a small microwave safe bowl, combine Mozzarella cheese and cream cheese. Heat for 60 seconds, stir and heat for about 30 more seconds. You can melt over the stove if you wish as well.
