This lemon chicken alfredo is about as close to a single skillet dinner except for the ones that actually only use one skillet of course.

The only thing that requires an additional pot is the blanching of the broccoli. Other than that, it is all done in the skillet.

Those are the best dinners in my opinion. Easy to make, easy to cleanup.

How to Make Keto Chicken Alfredo

In a large skillet, heat 2 tbsp of olive oil over medium-high heat.

Add the chicken breast cutlets to the skillet along with salt and pepper to taste. Cook chicken thoroughly, flipping partway through.

Meanwhile, blanch the broccoli for 5 minutes, rinsing in cold water right away and draining well.

Once the chicken is thoroughly cooked, remove from the skillet and reduce heat to medium.

Add minced garlic to the skillet and saute for 30 seconds.

Add the white cooking wine, and whisk to scrape the bits off the bottom of the pan.

Continue cooking until the wine has mostly absorbed.

Add chicken broth and heavy whipping cream to the skillet. Whisk well until combined. Cook until the sauce thickens.

You sure can! Keto noodles, that is! You can make your own keto egg noddles (which are fantastic by the way) or you can serve this over palmini noodles.

Palmini noodles are made from hearts of palm and are quite tasty. They take a bit of getting used to as they are a bit more crunchy than your average linguini noodle, but once you do - you may just fall in love with them!

Can I Leave out the Lemon?

You can definitely leave out the lemon. The lemon really does complete the flavor profile so you might be missing out on some flavor.

But if you don't have lemon, feel free to skip it.

Can I Make Part of the Keto Chicken Alfredo Ahead of Time?

Yes, you can make part of this recipe ahead of time. Things will be a bit different sightly in terms of taste, but here is what you can do:

Make chicken ahead - if you want to make the chicken ahead of time, you can easily do so. Simply make the chicken according to the instructions, cool and store in an airtight container in the fridge.

Instead of adding the garlic to the chicken grease, you'll just heat up some more olive oil and then continue the recipe as noted. You can simmer the chicken in the sauce for a bit longer to warm it back up, however.

If you want to make the sauce ahead of time, you can do so as well. Heat up some olive oil and make the sauce according to the instructions. Store in an airtight container in the fridge. When you are ready, prepare the chicken and broccoli, then combine them all together and simmer.
