Have you ever had beef stroganoff? It’s a Russian dish that involves dredging beef in flour, frying it up, then serving it in a rich and creamy sauce over a big ole pile of noodles.

…so you can probably spot a couple of issues for us low-carbers. First, dredging in flour? No thanks. Second, high-carb noodles that distract you from the amazing taste of the beef and the sauce? How silly!

This seemed like the perfect opportunity to turn a traditional recipe into something hearty, delicious, and low carb. Which is EXACTLY what you get with Keto beef stroganoff!

The good news is that the rest of the ingredients for stroganoff fit pretty nicely into a low carb way of eating. How can you go wrong with a creamy sauce made with mushrooms, onions, garlic, and Worcestershire?

And by replacing the noodles with riced cauliflower, we turn a high-carb classic into a Keto-approved big bowl of delicious comfort!

How to Make Keto Beef Stroganoff

Heat the olive oil in a large skillet over medium high heat on the stove.

Add the ground beef, mushrooms and onions to the skillet, and stir to combine.

Continue to saute until the meat is completely browned, and the vegetables are beginning to soften.

Add the minced garlic, cream cheese, sour cream and heavy whipping cream to the skillet, and stir to combine until the cream cheese is melted.

Pour the Worcestershire sauce into the skillet, as well as salt and pepper to taste.

Continue to cook the mixture down until the sauce has thickened to your liking.

What Kind Of Beef Do You Use?

As I mentioned, traditional beef stroganoff involves dredging thin strips of beef in flour and then pan-frying them. Good stroganoff turns out tender and juicy. Bad stroganoff turns out tough and chewy.

Since we’re not dredging our meat, I decided to go the much easier route. Instead of thin strips of beef, we simply use ground beef instead!

It’s a breeze to cook in a pan, and no one ends up with tough chunks of beef they have to chew for four full minutes before it’s safe to swallow. Win-win.

So while it’s not entirely traditional, this Keto ground beef stroganoff is practically foolproof. And way, way healthier. Oh, and pretty delicious, too!

What Is Keto Stroganoff Sauce Made Of?

Ground beef can be tasty in pretty much any recipe. From mini pepper nachos to cheeseburger soup, it’s an ideal ingredient for putting together a hearty meal.

But what REALLY makes this Keto stroganoff special is the rich, creamy sauce that cooks right in the pan with the beef!

So what goes into this magical sauce, you may ask?

To kick things off, you’ll cook the ground beef in a pan with the mushrooms, onions, and olive oil. Then, once the beef is cooked, you’ll add minced garlic, cream cheese, sour cream, and heavy whipping cream to create a rich sauce that soaks up all the flavors from the beef!

Yeah, it’s exactly as delicious as it sounds.

And once the cream cheese has melted and the sauce is well-combined, you’ll throw in a little Worcestershire sauce just for fun. I mean, is there any savory dish that’s NOT made better by some Worcestershire?

What Do You Serve With Beef Stroganoff?

Classic stroganoff is served over a heaping pile of egg noodles. It’s a high-carb, high-fat, stick-to-your-ribs kind of dish.

I don’t know about you, but I don’t really want anything sticking to my ribs.

That’s why we swap out those carby egg noodles for cauliflower rice instead! You still get a big bowl of hearty comfort, but without the kind of carb count that could put you into a food coma.

Plus, the cauliflower rice is amazing for soaking up any extra sauce.

Is It OK To Freeze Beef Stroganoff?

You bet it is!

In fact, this is the perfect meal to freeze for future dinners. Just let the beef and sauce cool completely, then store them in an airtight container or gallon bag in the freezer for up to 3 months.

I recommend storing just the beef and the sauce without the cauliflower rice so it doesn’t get soggy.

You can also store leftovers in the fridge if you plan to eat them within a few days!

  • 2 1/2 cups riced cauliflower cooked
  • 1 tablespoon olive oil
  • 2 pounds lean ground beef
  • 6 ounces sliced mushrooms
  • 1/2 medium onion chopped
  • 2 teaspoons minced garlic
