Below are the kitchen essentials that you will want to have on hand for this Brussels sprouts recipe.

  • Dutch oven (not required, but nice to have) – If you don’t have a Dutch oven, consider ordering one here.  I love cooking with it because you can start on the stove and end in the oven without ever changing dishes!

How to cut Brussels Sprouts

Now, I will admit that I probably go overboard and make this WAY harder than it has to be. I will also admit that I have OCD and that I am particularly careful with certain veggies.

I first rinse them.  Then, I peel the outer layer from EACH sprout, cut off the bottom part of the stem, and then either quarter or half the sprout.

Boom.  That’s it!  It is time-consuming but worth it.

Preheat oven to 325 degrees. In a Dutch oven (or oven safe pot), add olive oil and Brussels Sprouts. Brown the outside and cook until partially done. Above 10-15 minutes.

Remove from heat. Add spices, heavy whipping cream, bacon and cheese. Mix well.

Put the lid on and bake in the oven for 15 minutes.

Keto Brussels Sprouts Recipe Variations

If you want to take this Brussels sprouts recipe to the next level, save your bacon grease and cook the Brussels sprouts in the bacon grease. Oh my! That is next-level tasty.

You can also vary the cheese that is used. Pretty much any cheese that you fancy will work nicely in this recipe. I tend to lean toward the white cheeses.

Lastly, mix up the spices and take some kitchen liberties with the blending of flavors.

Should I Soak the Brussels Sprouts?

Some people like to soak Brussels sprouts to make them more tender on the inside. Sometimes what happens is that you can get the outside nice and tender but the inside doesn’t quite get as tender.

Soaking can help with this. I don’t find it overly necessary with this keto Brussels sprouts recipe, but it is an option for sure.

  • 8 slices bacon cooked and chopped (see Perfect Bacon Recipe )
  • 1-1.5 lb Brussels Sprouts quartered
  • 2 tablespoons olive oil
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon basil
  • 1/2 cup heavy whipping cream
  • 1 cup shredded medium white cheddar cheese
