Keto Fried Rice

Do you get sick of cauliflower sides while eating keto?  I do! BUT…. I threw this Keto Fried “Rice” together and it is pretty tasty! 

Definitely a great keto side dish that doesn’t taste like bland cauliflower. 

 You can spice it up and give it a few twists if you want!  If you buy the premade Cauliflower rice (Costco), it makes this SUPER simple

Keto Fried “Rice”

Keto Fried “Rice”

Ingredients

  • 2 cups cauliflower rice
  • 2 + 1 Tablespoons avocado oil
  • 1/2 red bell pepper, diced
  • 2-3 slices of cooked bacon, chopped
  • 2 eggs
  • salt and pepper to taste

Instructions

  1. If you have cauliflower instead of cauliflower rice, simply put it in a food processor (uncooked) to get rice consistency.
  2. Warm 2 Tablespoons of avocado oil over medium heat. Add cauliflower rice, peppers, bacon, salt and pepper to the pan. Cook and stir for about 5-7 minutes.
  3. Push rice to one side and add remaining 1 Tablespoon of avocado oil to exposed part of pan. Beat eggs in a small dish and then add to exposed part of pan. Cook eggs, stirring occasionally until done.
  4. Mix it all together and serve!
