How to Make Italian Lemon Cookies
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Add the butter and ½ cup sweetener into a mixing bowl and blend until creamy. Add the remaining ingredients for the cookies into the bowl and continue mixing until well combined.
Form the mixture into 15 evenly sized cookies and place them onto the baking sheet.
Bake for 10-12 minutes or until lightly browned. Let the cookies cool to room temperature.
Whisk together the lemon juice, zest, and sweetener. Add in almond milk as needed until the desired glaze consistency is reached.
Drizzle the glaze over the cookies.

These cookies provide quite the platform for swapping out flavors. You can easily swap out the lemon for lime or orange. With that simple swap, you can create a whole new cookie with a whole new flavor.
Swapping the almond milk for macadamia nut milk, coconut milk or oat milk is also an option. Exercise caution when using oat milk as that is much higher in carbs, but it does give it a nice flavor.
Are Italian Lemon Cookies Keto Friendly?
Regular Italian lemon cookies are not keto friendly. This recipe, however, is definitely keto friendly. With the use of almond flour and low carb sweeteners, it comes in at 2g net carbs per cookie. Not bad at all.

Tips For Decorating
Who am I kidding? I don’t decorate anything very well! The icing drizzles really nicely as is. If you wanted to make it thicker, you could pipe it or spread it. But I personally think the drizzle adds the perfect finishing touch.
