Garlic Lover’s Pesto Spread
I have another Pesto Sauce that serves a slightly different purpose.
Let me start out by saying if you are NOT a garlic fan, turn back now. But before you do, check out my Spinach and Cashews Pesto sauce that has a similar base but not spice from garlic cloves.
Ok, so if you have read this far, then you are a garlic lover just like I am.
This is definitely not your traditional pesto sauce.
We wanted to make a fun filling to spice up an omelet.
I’ll post that recipe once I write it up, but until then, just know that a good use for this is an omelet. You can also use it as a spread!

Garlic – Garlic is known to be able to help with sickness and the common cold.
It can also reduce blood pressure just might lower the risk of heart disease and help prevent Alzheimer’s.
Here’s a big reason that I like garlic and that is that may help detoxify the body of heavy metals.
And ladies – garlic has also been shown to help with bone health in women. As I get older, I definitely could use this!

Spinach – I like a spinach base rather than a basil base. There are many kinds of pesto bases out there, but spinach is my favorite.
Spinach is high in fiber – which you can thank me later for! You know… that pesky keto constipation….. Fiber helps!
It is also a great source for vitamin A, C, K, folic acid, iron, and calcium. 
Cashews – Although cashews are on the higher side from a carb perspective, they are also on the higher side taste-wise!
Cashews have the potential to lower cardiovascular disease and are jam-packed with vitamins and minerals such as potassium, vitamin E, vitamin B-6 and folic acid. 
Cheese – Cheese needs no introduction. CHEESE!
Food Processor – I use my Ninja for these types of things. Mine has a puree setting so it will automatically start the speed off on low and gradually increase it.
As long as you have a higher powered food processor or blender, it should do just fine.
How to use Pesto
Oh my gosh – there are SO many ways to use Pesto! I love to stuff chicken breasts with Pesto (YUMMMM)!

Keto Chips? YES!!!
This garlic lover’s pesto spread is meant to be more chunky than saucy.
For this reason, it makes blending a bit more challenging.
It simply requires patience, starting and stopping to shake it up, and the use of different speeds.
Stick with it knowing the result will be out of this world!
- 1 cup baby spinach
- 1/2 cup olive oil
- 1/2 cup shredded 3 cheese blend (at least needs Parmesan)
- 1/2 cup cashews
- 4 garlic cloves
- 1 teaspoon dried parsley
- 1.5 teaspoons Italian Seasoning
- Throw it all into a blender or food processor and start blending.
- Start on low. Stop often to shake around if needed.
- This is supposed to be chunkier than regular pesto, so be patient with the blending.
- Store in an airtight container!
