Chocolate Cookie Mousse Pie with Peanut Butter Drizzle

Peanut butter is one of those gray areas with keto.  I mean, keto is keto, right?  But people came up with all these categories like strict, dirty, lazy, etc.  In strict keto, I’m pretty sure peanut butter is not allowed.

It has more to do with peanuts being legumes than anything else.  Traditional peanut butter is very high in sugar.  Have you ever looked at a label of Jiffy?  YIKES!

On occasion, I get in the mood for just a taste or flavor hint of peanut butter.  I either will get unsweetened, natural crunchy peanut butter OR I will mix P2B with melted butter and let it sit and thicken for a few moments.  Just on occasion!

This recipe calls for an optional drizzle of a P2B and butter mixture.  Totally optional but it adds just a tiny peanut butter flavor which perfectly compliments this pie!

You can also melt peanut butter (the KETO KIND) and drizzle it on top too!

Chocolate Cookie Mousse Pie

Pies are comfort foods for me.  I’ve always been a baker.  I do think there are 2 types of people in the kitchen: the bakers and the cooks.  By cooks, I mean like dinners and such.  And of course, there are some that are blessed as both.

More often than not, though, there are 2 groups.  I am a baker, not a cook.  My hubby is a cook, not a baker.  So we are a pretty good mix.

Back to the comfort foods, though.  One of my comfort foods has always been pies.  With keto, I can not enjoy pies more often without the guilt of sugar and garbage that is in regular pies.

Indulge in this chocolatey flavor with a hint of peanut butter pie and relax knowing it is fully keto.

Kitchen Essentials

Well, you can’t make a pie without a pie pan!  I mean, duh!  So this one is obvious.  I like these ones the best.  I have several different ones, but the frilly tops are just adorable!  Pie pans aren’t just for baking, but they are for presentation as well!

I love to bake a pie and then be able to serve it in the beautiful pan.

Erythritol and liquid stevia are my choices for this pie!  As for granular sweeteners, I always use either erythritol or monkfruit.  Either one is acceptable.

Especially for erythritol, though, I like to temper it with some liquid stevia.  For those that are sensitive to sweetener aftertastes (which sometimes there is one and others there isn’t), the combo of erythritol and liquid stevia really balance each other out.

This pie is pretty simple to make but does require a bit of work when it comes to mixing in the whipping cream layer.  Don’t give up and don’t do a half worthy job.  Use that forearm strength and just keep folding and mixing.  It will be well worth the effort!

I LOVE chocolate mousse – in a pie, in a dish, on a spoon…  Anywhere, anytime.  Add peanut butter to that and it is heavenly.

Topping (OPTIONAL)

  1. Prepare pie crust as instructed and let cool.
  2. In a large bowl, combine room temperature cream cheese, butter, avocado, vanilla, 1/2 cup erythritol and cocoa powder. Mix well.
  3. Blend with hand mixer until fluffy. If the cream cheese was too cold and it doesn't become fluffy, then add the 1 tablespoon of heavy whipping cream. Otherwise skip it.
  4. In a separate bowl, mix together heavy whipping cream, 2 teaspoons erythritol, 1 teaspoon vanilla,1/8 teaspoon almond extract and 8 drops liquid stevia.
  5. Beat on high with a hand mixer until peaks form.
  6. Fold whipping cream into chocolate mixture 1/3 at a time. Expect to get a good forearm workout - but stick with it!
  7. Add to pie crust and set aside.

  1. Mix melted butter and P2B in a small bowl.
  2. Drizzle on top of pie crust.

Putting it all together

  1. Refrigerate pie for at least an hour before serving so it can set properly!
