Ooey Gooey Chocolate Chip Bars
I LOVE desserts and snacks like these keto bars – appropriately titled “Ooey Gooey Chocolate Chip Bars”!
And the best part is that they are SO simple!
These beautiful bars are solid, yet gooey. The perfect blend of both!
These are not bars that you can stick in a lunch box or in your purse. These are the kind that you place on a plate, grab a spoon or fork, and eat to your heart’s desire.

My favorite One Stop Keto Shop, Perfect Keto, came out with a new flavor of clean keto bars (Chocolate Chip Bars) and I was in love! When I took the first bite, I knew I had to make a fun dessert/snack out of it!
I mean, they come stock full of the most giant chocolate chips I’ve ever seen. I knew they would make the best base for a dessert!
Kitchen Essentials
Loaf Pan – You’ll need a standard loaf pan. I prefer to use silicone because it makes it easy to clean up and also easy to get the bars out!
Sauce Pan – To make the keto sweetened condensed milk, you’ll need a nice sauce pan.
Other than that, just the basics!
Now if you want them EXTRA OOEY AND GOOEY, simply let them sit on the counter for a few minutes before serving. You can see above the exact consistency of these lovely bars once they’ve sat out for a bit. They will form a solid shape, yet they will remain ooey and gooey.
BUT, if you want them more firm (but still soft), then serve directly upon taking out of the fridge.
How to make the Ooey Gooey Chocolate Chip Bars
First, of all, you need to stock up on some keto bars. You can use code RUNNINGKETO to get 20% of the Perfect Keto Chocolate Chip Bars.
If you have other chocolate chip keto bars on hand, like Quest bars, I imagine you can use those too! Just make sure whatever bars you use are full of chocolate chips!
Try not to eat them all before using them in this recipe!
The good thing is that you only need 4 bars to make these keto bars and you’ll have plenty left over to snack on.
You’ll need to crumble 4 bars into the bottom of a loaf pan.
The next step is to create the sauce that you will legit want to just eat with a spoon.
This sauce is a slight variant of my keto sweetened condensed milk recipe, so that should tell you how yummy it is!
It will take about 20 minutes to create the sauce, and then you pour it over the chocolate bar crumbles.
Finally, you’ll top with the shredded coconut.
You’ll be tempted to grab a spoon at this point. Resist it. Well, I mean, if you want to take a small bite, go ahead!
You’ll then stick them in the oven and bake them!
The HARD PART is that you cannot eat it after baking it. WHAT?? I know, I know.. You’ll have to wait just a bit longer.
When it comes out of the oven, it won’t be set yet. You’ll need to refrigerate it for at least 4 hours to allow it to set properly.
My kids absolutely devoured these! It makes me happy when they love my creations. Even when it means “my creation” is gone in only a few moments!
I usually make several batches anyway since I have to verify the recipe and alter things at times.
I will admit that I do hide my Perfect Keto Bars hidden. SHHHHHH!

Ooey Gooey Chocolate Chip Bars

Ingredients
- 4 Perfect Keto Chocolate Chip Bars crumbled
- 1 cup heavy whipping cream
- 2 tablespoons butter
- 2 tablespoons golden monkfruit
- 1 tablespoon almond flour
- 1/8 teaspoon xanthan gum
- 1 teaspoon vanilla
- 2 tablespoons unsweetened shredded coconut
Instructions
- Preheat oven to 325 degrees F.
- In a medium sauce pan, heat heavy whipping cream, butter, and monkfruit over medium heat.
- Simmer and stir often for 10 minutes. A very soft boil (light bubbles) is perfect. You want the sauce to start to thicken.
- Add almond flour and xanthan gum. Continue stirring and simmer for 10 more minutes.
- Meanwhile, in a load pan (approx 9x4), crumble Perfect Keto bars in the bottom of the pan.
- Once sauce is slightly thickened, remove from heat and add vanilla.
- Mix well and pour over cookie crumbles.
- Top with shredded coconut.
- Bake for 15 minutes.
- Place in fridge at 3-4 hours to let set. DO NOT TRY TO EAT BEFORE IT SETS!
- Serve and keep cold!
