Keto Parfait with Peanut Butter and Chocolate
I was in the mood for a cold treat! A smooth, creamy, peanut butter and chocolate keto dessert!
Parfaits came to mind and I decided to give it a shot. I’m happy to report that not only did I nail it on the first try, but that this keto treat is worth every moment making it! I think I ate half of it while making it the first time.
My kiddos really enjoyed this keto parfait. My youngest son LOVES flavored keto whipped cream so he ate this top down. Now me, on the other hand, ate this with a sample of each layer in each bite! To each their own!
How to Make a Keto Parfait with Peanut Butter and Chocolate
Chocolate Layer
In a large frying pan, add heavy whipping cream and heat over medium heat until warm. Stirring often.
In a small bowl, mix together sweetener, cocoa, flour, salt and xantham gum and add to heavy whipping cream. Continue stirring often as it begins to thicken.
Separate egg yolks into a small bowl and beat with a fork. Temper yolks and add to heavy cream mixture. Keep stirring for 2-5 more minutes until thicker.
Remove from heat and add evenly to 3 dessert cups.
Place dessert cups in the freezer for 10 minutes to cool.
Peanut Butter Layer
Add all ingredients to a small bowl and beat with hand beaters for several minutes until light and fluffy like you would expect homemade whipped cream to me.
Scoop evenly on top of the chocolate in dessert cups.
Place dessert cups back into the freezer while making the whipped cream.
Whipped Cream Layer
Add all ingredients to a small bowl and beat with hand beaters for several minutes until light and fluffy!
Finally, scoop the whipped cream evenly on top of the peanut butter layer.
Keep cold and serve cold!
What is Parfait?
I don’t know what the official definition of a parfait is, but generally when I think of a parfait, it is a frozen dessert that has an egg and cream base. BOOM.
In this delicious keto dessert, we have a creamy/egg base with various whipped cream layers on top. Really the best of all dessert worlds!

How to Store a Keto Parfait?
I store these in the freezer if it will be more than a day. You’ll have to let them thaw slightly before eating.
You can also store them in the fridge, but after a day or so the whipped cream layers start losing their form. Still tastes good though!
