Keto Cajun Chicken and Sausage Pasta
Ingredients
- 2 tablespoons Olive oil
- 1 pound boneless skinless chicken breasts cut into bite sized pieces
- 8 ounces Andouille sausage sliced
- 2 teaspoons Cajun seasoning divided
- 2 tablespoons butter
- ¼ onion chopped
- ½ red bell pepper chopped
- ⅓ cup celery chopped
- 2 teaspoons minced garlic
- 1 cup heavy whipping cream
- ⅓ cup Parmesan cheese grated
- 1 package of palmini linguine noodles drained well
Instructions
- Heat the olive oil in a skillet over medium high heat.
- Season the chicken with 1 tsp of the cajun seasoning, and saute until completely cooked through.
- Remove the chicken and set aside.
- To the same skillet, add the sausage and saute until browned. Remove and set aside.
- Reduce the heat to medium, and melt the butter in the skillet.
- Toss in the onions, peppers and celery, and saute until softened.
- Stir in the garlic, and saute for another 30 seconds.
- Pour in the heavy whipping cream, parmesan cheese and remaining seasoning. Stir, and simmer until the mixture has thickened.
- Mix in the pamini noodles, and return the chicken and sausage to the skillet. Stir to combine, and saute for 2-3 more minutes.
