Ah, mashed potatoes. I’m not sure I know of anyone who dislikes mashed potatoes. I’m sure you all are out there, but I haven’t run across anyone.

Fast forward to keto and most of us are like NOW WHAT? The running joke is that everything on keto is made out of cauliflower. While that is not true, it IS true for replacing mashed potatoes.

I have tried and tried and tried so many recipes and different combinations of ingredients to get it just right. This cheesy keto mashed cauliflower recipe brings out the consistency and flavor of good old-fashioned mashed potatoes as best as it possibly can. And let me tell you, it gets pretty close to the real thing.

How Do You Thicken Keto Mashed Cauliflower

One of the biggest complaints of keto cauliflower mash is that it is runny. Many of them, anyway. And I can support that complaint given how many I have made. There is definitely a trick to making sure you get just the perfect consistency in the mixture.

Many recipes make the mistake of getting a good consistency before baking and then it turns out to be running once it is done baking. This keto mashed cauliflower recipe does not use any liquid because you don’t need to do so!

And if you do find that for whatever reason your cauliflower mash is runnier than you would like, simply add a bit more cheese and mix it up. But that shouldn’t be something you have to worry about with this recipe!

How Many Carbs in Cauliflower

Some people are concerned with certain vegetables as to whether they are keto or not. You definitely don’t need to have this worry when it comes to cauliflower.

One cup of cauliflower has about 5g total carbs and 2g fiber. This results in about 3g net carbs for an entire cup of cauliflower. Totally keto and totally tasty!

Preheat oven to 400 degrees F.

In a food processer, add all the ingredients except the cheese and process until smooth.

Add ½ the mixture to a baking dish, top with ½ the asiago cheese, add the remaining mixture and finally add remaining cheese. 

Bake for 30 minutes or until golden and bubbly.

Can I Make Keto Mashed Cauliflower Ahead of Time

Most of the recipes on my site can easily be made ahead of time. With cauliflower rice, I wouldn’t recommend making it too far in advance. It is one of those dishes that is best served fresh and hot.

How to Store Cheesy Keto Mashed Cauliflower

Storing keto mashed cauliflower is super easy. Just put it in an airtight container and keep it cold in the fridge. It will stay fresh for 3-4 days, but the longer it sits, the runnier it may become.

If it has been a couple of days and you want to reheat it, you can always add some more cheese, warm it up and give it a good stir!

  • 1 teaspoon garlic powder
  • ¾ cup butter unsalted
  • 12 ounces cream cheese softened
  • 1 cup shredded asiago cheese
