Ground Beef Meal Prep
I LOVE talking about meal prep! It is one of those simple things that can mean a world of difference during one of those HANGRY and weak moments where you just need food.
Or maybe you’ve been busy with kids all morning and haven’t had time to consider lunch.
We are going to dive into 4 easy ground beef meal prep bases that you can easily make so that you always have something on hand.

How to Rock Ground Beef Meal Prep
Let’s start with just the ground beef part!
What you’ll need
2 pounds ground beef

Instructions
Add ground beef to a large pan. Heat over medium/medium-high heat.
Stir often to evenly brown the meat.
When completely cooked, split into 4 equal parts and set aside.
SAVE the grease for one of the recipes below.
Ok, so let’s get to how to make the sauces and spices for each one!
How to Make Marinara Sauce
Ingredients
1 14.5 ounce can Rotel
1 8 ounce can tomato sauce
1 tablespoon tomato paste
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon pink Himalayan sea salt
1/2 teaspoon pepper
Instructions
Put all ingredients into a blender until desired consistency.
This makes 2 cups. That is way more than you need. How much you put in your ground beef depends on your desired carb count.
If stored properly, you can save the remaining in the fridge for up to a week.  I use it for keto pizza, keto flatbread and even my second round of meal prep!
Add desired amount of sauce to ground beef and you are set!
There are 2g net carbs per 1/4 cup of this sauce.
How to Make Taco Seasoning
Ingredients
1 teaspoon cumin
3/4 teaspoon chili powder
1/2 teaspoon sage
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon basil
1/4 teaspoon chipotle chili powder
1/4 teaspoon pink Himalayan sea salt
1/4 teaspoon cinnamon
Either leftover grease from cooking ground beef or some water
Instructions
Add all ingredients to a small bowl and combine well.
Add to ground beef and add as much grease or water that you need in order to allow spices to combine with meat.
This makes about 1.5 tablespoons and totals 2.5g net carbs.
How to Make Sour Cream and Onion Sauce
Ingredients
1 T butter
1/2 tablespoon minced garlic
1/4 cup chicken broth
1/2 cup sour cream
1/8 tsp xanthan gum
1/8 teaspoon onion powder
1 T almond flour
Instructions
Add butter and minced garlic to a medium frying pan over medium heat. Saute garlic until fragrant, about 60 seconds.
Add chicken broth and sautee until slightly thicker, about 5 minutes.
Add sour cream, xanthan gum, onion powder, and flour. Mix well and heat for 2 minutes.
Remove from heat and add to ground beef. Mix well.
There is 6g net carbs in this sauce.
Salsa
Ingredients
1/2 cup salsa
Instructions
No instructions since we are using premade salsa. If you want to make your own, you can check out this keto salsa recipe.
Keto Meal Ideas
The following are some meal ideas that you can use with the above ground beef meal prep bases!
Zoodles and sauce (use the marinara one)
Beef stroganoff (use the sour cream one) over cauliflower rice
Scrambled eggs with salsa meat on top
And of course, just eating it plain with your favorite side dish!
