I've tried making corned beef in both the oven as well as a crockpot.  It is hit or miss at times in terms of the beef being dry or not.   I wanted a consistent way to make one of my most favorite meats!

I went to work and gave my Instant Pot a shot.  It turned out WONDERFUL!  But, sometimes things are a fluke and so I tried it 2 more times, each with a slightly different recipe.

Every time, the meat came out tender, flaky and just downright AMAZING!

I varied one ingredient each time and choose the variation with the best flavor.

Apple Cider Vinegar for the win!

The substitute was a Coke Zero that my hubby wanted to try.  It actually tasted pretty good, but I prefer to stay away from that as an ingredient in a recipe.

I'm glad I gave it one more shot, because Apple Cider Vinegar was the last one to try.

Do I Put the Seasoning on the Fat Side?

There is great debate over this one.  Some people like to fully flavor the fat and other like to flavor the meat.

I am not a huge meat fat fan.  I know, I know, I'm keto so how could I not, right?  Well, I don't.  I eat plenty of fats, but I prefer to eat AROUND the fat on meat.

So I put the seasoning on the meat side.

It is totally your choice however!

How To Make Instant Pot Brisket

This has to be one of the most simple meals on the planet!  Are you ready for it

Get your Instant Pot or Pressure Cooker ready and add apple cider vinegar, chicken stock and minced garlic to the pot.

Remove corned beef from the package and sprinkle seasoning on the non fat side.  OR the fat side if you prefer.  It is totally up to you!

Place the trivet (I don't think that is the right word, but you know what I mean!) into the pot and place the beef on top of it, fat side down.

Put the lid on and set to pressure cook for 90 minutes.  Slow release or quick release, up to you!

And its done!

Instant Pot Corned Beef

Ingredients

  • 1 corned beef
  • 1 packet of spices (comes with corned beef)
  • 1/4 cup apple cider vinegar
  • 2 cups chicken stock
  • 1 tablespoon minced garlic (can be dried)

Instructions

  1. Open spice pack and add to top of corned beef. Press down so it sticks.
  2. Cut beef in half if it is too big to fit into Instant Pot sideways.
  3. Add apple cider vinegar, chicken stock, and garlic to Instant Pot.
  4. Place the rack in the bottom of the Instant Pot and add corned beef.
  5. Place on meat setting and pressure cook for 90 minutes.
  6. Slow release or quick release and serve!
