Keto Instant Pot Corned Beef

Corned beef, with its rich flavor and tender texture, has long been a staple for many, especially around St. Patrick's Day. However, mastering the art of cooking corned beef can be a daunting task, often involving hours of slow cooking. Enter the Instant Pot, a game-changer in the world of corned beef, transforming tedious cooking processes into manageable, enjoyable experiences.

After much experimentation, however, two things stood out among the rest and that is apple cider vinegar and the Instant Pot.

Why Choose the Instant Pot for Corned Beef?

Cooking corned beef in an Instant Pot offers several advantages over traditional methods. Firstly, it drastically cuts down the cooking time. What used to take hours in the oven or a crock pot can now be achieved in a fraction of the time, without sacrificing taste or texture.

Secondly, the pressure cooking method helps in tenderizing the meat, ensuring that every bite is succulent and flavorful.

Lastly, it frees up your time and your oven, allowing you to focus on preparing other dishes or simply enjoying the company of your family, guests or SELF!

Do I Put the Seasoning on the Fat Side?

This is a great debate! The answer lies in the balance of flavor and texture that you aim to achieve. Seasoning the fat side of the corned beef can enhance the flavor profile of the meat as it cooks under pressure. The spices and seasonings can meld into the fat, slowly infusing the meat with their essence as the fat renders down. This method not only maximizes flavor but also contributes to a more tender and moist final product.

However, for an even distribution of taste, consider scoring the fat slightly and rubbing the seasoning over and into these cuts. This approach allows the spices to penetrate deeper into the meat, ensuring every bite is as flavorful as the next.

Whether you choose to season the fat side or both, remember that the Instant Pot's enclosed cooking environment helps to lock in these flavors, creating a corned beef dish that is both aromatic and delicious.

Tips for Perfecting Instant Pot Corned Beef

Below are my favorite tips and tricks for the perfect dinner.

Choosing the Right Cut

The choice of meat cut can significantly impact the outcome of your corned beef. The brisket, available in 'point' or 'flat' cuts, is the most commonly used. The point cut is fattier, offering richer flavor and tenderness, while the flat cut is leaner and slices more neatly.

Spice It Up

Corned beef traditionally comes with a spice packet, but don't be afraid to add your personal touch. Consider incorporating fresh garlic, bay leaves, or even a splash of beer for an added flavor dimension. If you want to prepare the real deal yourself, however, this corned beef seasoning is the best.

Natural Pressure Release

After the cooking process, allow the Instant Pot to release pressure naturally. This step is crucial as it continues to cook the meat gently, ensuring that it remains moist and tender.

Rest Before Slicing

Patience is a virtue, especially when it comes to corned beef. Let the meat rest before slicing to ensure that the juices are redistributed, making each slice perfectly moist.

How To Make Instant Pot Brisket

This has to be one of the most simple meals on the planet!  Are you ready for it? Get your Instant Pot or Pressure Cooker ready and add apple cider vinegar, chicken stock and minced garlic to the pot.

Remove corned beef from the package and sprinkle seasoning on whichever side floats your boat.

Place the trivet into the pot and place the beef on top of it, fat side up or down (depending on preference).

Put the lid on and set it to pressure cook for 90 minutes.  Slow release or quick release, up to you. Cut, serve, and watch everyone enjoy this tender beef dinner!
