Gluten Free Cauliflower Parmesan
Ok, this is one of those crazy recipes that you just have to try! I mean, who would have thought of Cauliflower Parmesan?
I am not a vegetarian, but I’m also not a daily meat eater. What feels good for me is a good mix of both. What is good about this recipe is that it can be a full meal or a side dish!
Cauliflower is like the universal substitute ingredient, right? We make everything with cauliflower it seems sometimes.
But isn’t it nice to make a recipe where the main ingredient is SUPPOSED to be cauliflower? YES!

How to Make Gluten Free Cauliflower Parmesan
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Rinse the cauliflower in cold water and pat dry with paper towels.
Place the cauliflower on a cutting board and slice in 1/4 inch slices, across the head. You want thick slices, about the thickness of chicken cutlets.
Place the cauliflower on the baking sheet, and sprinkle with garlic salt and pepper.
Add butter and olive oil to a saucepan and heat over medium heat.
After the butter melts, add the onion. Saute for about 5 minutes, until golden brown.
Add the minced garlic and saute for 1 additional minute.

Turn the heat to low and add the tomato sauce, Italian seasoning, coarse ground garlic salt, salt, pepper, and brown sweetener. Stir until well combined.
Turn heat to medium-high and heat until bubbly. Spoon sauce over cauliflower slices on the baking sheet. You want the cauliflower totally covered.
Top the slices with a generous amount of shredded Parmesan cheese.

Bake for 30 – 45 minutes, making sure the Cauliflower slices are golden brown on the bottom and the sauce and cheese are thick and browned well.
Remove from the oven and let them cool for 2-3 minutes.

Is this Cauliflower Parmesan a Side Dish or a Meal?
Well, it can be either! It depends on what you feel like on a given day!
If you want a lighter meal without meat, then have a larger portion and make this a meal! If you want to enjoy a nice steak with this as a side dish, then have at it!
This truly is a versatile dish that can be made into almost anything!

Is Cauliflower Parmesan Keto Friendly?
Not as is. I mean, it IS if it fits your macros as there are no bad ingredients. The higher amount of tomato sauce is what raises the carbs.
If you want to make this keto friendly, you could mix tomato paste with water (the proportions can be whatever you see fit) and replace the tomato sauce.
Lastly, you can decrease your portion and still enjoy this recipe as is!
This is low carb, however!
