What is Needed to Make Keto Vanilla Wafers?
To make these delicious keto vanilla wafers you need the following:
- Just 5 Ingredients (listed below in recipe)
- Medium Size Mixing Bowl
- Whisk
- Plastic Wrap
- Parchment paper
- Cookie cutter
- Baking Sheet
- Cooling Rack
How to Make Keto Vanilla Wafers
Add together all of the ingredients in a mixing bowl, and blend until a thick dough forms. The dough should pull away from the whisk easily.
Wrap the dough tightly in plastic wrap, and chill for 30 minutes.
Preheat the oven to 350 degrees.
Roll the dough out between two pieces of parchment paper, to your desired level of thickness. The cookies will not really rise much at all, so this should be the thickness you want your wafers to be when complete.
Use a small round cookie cutter to cut shapes from the dough.
Transfer the cookies to a parchment lined baking sheet. Bake for 8-10 minutes until browned and cooked through.
Allow cookies to cool completely before serving.
Are These the Same as Keto Vanilla Cookies?
Are you the type of person who thinks of cookies and wafers as one and the same? I am! I know that not everyone calls them the same thing, but if I hear vanilla cookies, I am in fact thinking of these delicious wafers!
Are Gluten Free Vanilla Wafers Keto Friendly?
While typical keto wafers or even gluten free vanilla wafers are not keto friendly, these keto vanilla wafers have just 1 net carb each! That is a perfect way to add a little sweetness to your diet without guilt.
This recipe makes 24 cookies.
How Long Does It Take to Make This Keto Vanilla Wafer Recipe?
With a prep time of 15 minutes and a maximum cooking time of 10 minutes, you will be enjoying these delicious keto wafers in less than a half hour! As you can see, this is the kind of recipe that is perfect for those times when you want a sweet treat, but are short on time.
What Can Be Served with These Keto Vanilla Wafers?
Feel free to eat these gluten free vanilla wafers all by themselves, but they are also great for serving with other desserts.
Here are my favorite keto desserts to enjoy with wafers:
Banana Pudding
Banana pudding is the original recipe to serve vanilla recipes, right? I remember as a child eating banana pudding with the classic ‘Nilla wafers. The keto friendly versions of these are so delicious!
Cheesecake and Pie
These vanilla wafers make a great crust for keto friendly cheesecakes and pies. They create a crispy, cookie crust that is absolutely mouthwatering.
Ice Cream
Gluten free vanilla wafers make an excellent topping for your favorite keto ice cream.
Truffles
Use these keto vanilla wafers as a topping or addition to your favorite keto truffle recipe!
Can You Use a Different Sweetener in This Keto Vanilla Wafer Recipe?
While I know it may be tempting to use a different sweetener, especially if you have certain preferences, I highly recommend sticking to this recipe as is because it really does make a difference in how it turns out.
You can certainly use different brands, however. And if you don't have powdered sweetener, you can use granular and send it through the blender. And POOOF - homemade powdered sweetener!
How to Store Gluten Free Vanilla Wafers
These keto vanilla wafers stay good for quite a while when stored properly. Just be sure to store them in an airtight container on the counter or in the cabinet for up to five days. Store them in a freezer safe, airtight container.
Tips for Making the Best Keto Gluten Free Vanilla Wafers
Here are my tried and true tips for successfully making the best keto vanilla wafers:
Preheat Your Oven Fully
I know it’s tempting to just put the cookies in the oven, but trust me that you need to allow the oven to properly preheat first. This allows the cookies to bake properly.
Bake At The Correct Temperature
Yes, it’s tempting to crank up the heat and bake cookies faster (we want to hurry and enjoy them after all!), but be patient and bake them at the proper temperature. It’ll be worth it.
Follow The Recipe Exactly
You may be tempted to substitute ingredients, but I can assure you that this recipe turns out best when it is followed exactly.
Wait for The Butter to Soften
If your butter is cold, you need to take the time to allow it to soften. Melted butter doesn’t work the same as softened butter. Patience is key.
