Peanut butter cookies have always been a favorite of mine. I mean, who are we kidding. Simple peanut butter is my jam. But peanut butter cookies that are keto and gluten free really hit the spot EVERY TIME.

These delicious keto cookies have the perfect crunch and a soft center and are oozing with peanut butter flavor! Super simple and easy to make too.

How to Make Keto Peanut Butter Cookies

Preheat the oven to 350 degrees.

Combine all of the ingredients for the cookies in a mixing bowl and beat until a loose crumbly dough has formed.

Form the dough into 15 even sized balls, and flatten slightly with your hands.

Using a fork, make a criss-cross shaped design on the top of each cookie to flatten them a bit more. You don’t NEED to do this, but for some reason, traditional peanut butter cookies all have the signature criss-cross marks and a fork is the best way to get them!

Bake for 10-12 minutes until cooked through.

Is Peanut Butter Keto Friendly?

Generally peanut butter is usually filled with added sugar. However, there are plenty of keto friendly peanut butter brands out there.

My favorite brand is Adam’s creamy natural peanut butter. I also really like their crunchy version. It is the BEST in these keto peanut butter fat bombs.

Make sure the check the label on your peanut butter and make sure that it is as natural as possible without a ton of added sugar.

Can I Use Crunchy Peanut Butter?

YES! In fact, I will almost always use crunchy peanut butter. But I know creamy peanut butter is more popular so that is why we use it in this recipe.

Having said that – please feel free to use your delicious crunchy peanut butter in place of creamy peanut butter.

How to Store Keto Peanut Butter Cookies

Assuming you even have any left (doubtful), then throw them into an airtight container and pop them in the fridge. This will keep your cookies fresh!

Is Almond Flour or Coconut Flour Better for Low Carb Peanut Butter Cookies?

My preference is almond flour instead of coconut flour for keto peanut butter cookies. Coconut flour absorbs a lot of moisture and tends to keep baked goods fluffier. Cookies don’t spread out as much with coconut flour.

When you use almond flour, your cookies will spread out, get crispy on the outside and stay moist on the inside. Which is the perfect consistency for peanut butter cookies!
