Keto Chocolate Pudding
When you’re in the mood for a chilled dessert that’s super rich and creamy, it’s hard to beat a classic pudding.
That’s why I love making this 5-ingredient Keto chocolate pudding! It takes less than half an hour to prep, then you simply let it chill in the refrigerator for an hour or two. It’s so simple.
And the result is absolutely divine.
If you’ve never had homemade pudding before, believe me when I say that you’re in for a treat. Store-bought pudding cups have nothing on this recipe.
Plus, you can’t beat a low-carb pudding that only requires 5 ingredients. Bonus points: you can pronounce all of them!

Is Pudding Keto Friendly?
There are tons of different puddings out there, both homemade and store bought, so the answer to this question depends on which kind you’re talking about.
For example, a single chocolate pudding cup from the brand Snack Pack contains 19 grams of carbs and 13 grams of sugar. Not great for someone that’s watching their carb and sugar intake.
So what about the sugar-free kind? Are those any better?
Sugar-free chocolate pudding from Snack Pack has 14 grams of carbohydrates, but 8 grams come from sugar alcohols and can be subtracted. And with 2 grams of fiber, that brings a sugar-free chocolate pudding cup to 4 net carbs.
However, it’s important to read your labels. These snacks also contain ingredients that are not good for Keto and can spike your blood sugar like modified corn starch, sorbitol, malitol, and sucralose.
That’s why I prefer to make this homemade Keto chocolate pudding instead! There are no artificial ingredients or unwanted fillers. All you need is heavy whipping cream, cocoa powder, egg yolks, low-carb sweetener, and vanilla extract.
In fact, one serving only has 5 grams of carbs and 1 gram of fiber for a total of 4 net carbs! So you can feel good about indulging in this rich and creamy treat.

Are There Raw Eggs In This Recipe?
Nope! Everything in this recipe is cooked on the stove prior to setting in the refrigerator.
The trick is to temper the egg yolks so you don’t end up with bits of scrambled egg in your dessert. If you’re unfamiliar with tempering, it means slowly warming the eggs so they remain smooth and don’t solidify.
Don’t worry, it’s very easy.
For this recipe, you’ll simply whisk a little bit of the slightly-cooled cream and cocoa mixture into the beaten egg yolks and sweetener. Once combined, add a little more of the cream, whisk again, and that’s it!
After that, you can add the egg yolk mixture back to the pot and continue to cook it on the stove until it thickens.

What To Eat With Keto Chocolate Pudding
I like to eat this decadent treat all on it’s own. The chocolate flavor is so rich and wonderful! All you need is a spoon.
But if you want to add a few toppings, there are tons of yummy options. For example, a dollop of peppermint whipped cream would add a festive twist for the holidays. Or you could add a little crunch and tropical flavor with toasted shredded coconut.
Want to double down on chocolate? You can never go wrong adding sugar-free chocolate chips.
Or you could always use this recipe as the pudding layer in these Keto peppermint and chocolate pudding cups! This might be my favorite way to use up any extra.
How To Make Keto Chocolate Pudding
Add the heavy whipping cream and cocoa powder to a pot over medium heat on the stove.

Whisk to combine them completely. Continue to cook the mixture, whisking often to avoid scalding, until it just starts to steam. Do not let it boil.
When the mixture starts to steam, remove from heat. Allow it to cool until you are able to place your finger in it at a comfortable but warm temperature.
Combine the egg yolks and sweetener in a bowl. Whisk to combine well.

While whisking continuously, add a bit of the warm cream mixture to the egg yolk mixture. Once it is completely combined, add a bit more of the warm cream mixture to the egg yolks, continuing to whisk, until smooth and combined.
Once tempered, pour the egg yolk mixture into the pot with the cream mixture and place over low heat on the stove.
Whisk and continue to cook the mixture on low until it has thickened and can coat the tines of the whisk.

Remove the pudding from the heat, add the vanilla extract, and continue to whisk for about 5 minutes.
Transfer the pudding to the refrigerator to chill and set for 1-2 hours before serving.
