How to Make Keto Cheesy Chicken and Broccoli Casserole Bites

Preheat the oven to 350 degrees and spray muffin tin with cooking spray. In a skillet, melt butter in a skillet over medium heat.  Add in the onions and saute until softened.

Stir in the garlic, and saute another 30 seconds. Add the heavy whipping cream to the skillet and simmer until the sauce becomes thick. Let cool to thicken further.

In a small bowl, combine the pork rind crumbs and parmesan cheese. In a separate mixing bowl, add the chicken, broccoli, cheese, sauce mixture and salt and pepper to taste.  Mix well.

Press the chicken and broccoli mixture into the prepared muffin tin until they are full, and top with some of the pork rinds crumb mixture.

Bake for 15-20 minutes or until they are browned and crispy on top. Let cool for 10 minutes before removing.  Serve warm.

Top Tips for Making this Cheesy Chicken and Broccoli Casserole

Here are some of my favorite tips to make sure this casserole comes out the absolute best:

  • While you can use frozen broccoli florets, I find that it tastes much better when you use fresh broccoli instead.
  • If you have a preference for white meat, use chicken breasts instead of chicken thighs
  • Add some hot curry powder for a little added spice

Alterations that Can Be Made to This Cheesy Chicken and Broccoli Casserole

​While this recipe is quite delicious as is, there are some great alterations that you can make to it, that might just take this recipe up to the next level. Here are some of my favorites:

  • Swap the cheddar cheese out for mozzarella cheese
  • Add a dollop of sour cream on top of the bites.
  • If you are running low on time, you can use leftover chicken or even a grocery store bought rotisserie chicken in this recipe.

This cheesy chicken broccoli casserole bites recipe is a great one for meal prep. They store very well in the fridge or even in the fridge to be enjoyed later. You can place them in an airtight container and store them in the fridge for up to 3 days, or in the freezer for 3 months.

  • 4 cups shredded chicken
  • 2 cups steamed broccoli florets finely chopped
  • 1 ½ cups shredded cheddar cheese
