Cafe Latte Shakeology Mousse
I am having so much fun making these rich and delicious low carb Shakeology desserts. Have you tried the Chocolate Shakeology Truffles? Oh my!!!
This Cafe Latte Shakeology Mousse is quite the dessert. My husband could not get enough of it. In fact, he even devoured one of my mason jars full of mousse for lunch one day. I didn’t mind as I know it was healthier than other choices he could have made.

Is this Cafe Latte Shakeology Mousse Low Carb?
Of course this Shakeology Mousse is low carb. Almost everything I make is low carb! It has 7 total carbs which by any measure is low carb for a dessert.
The next question would be is it keto friendly? I would say that would be a personal choice. Most keto desserts are definitely higher in carbs than a normal meal, but if it fits your macros, then it can certainly fit into a keto lifestyle. It is gluten free too!
How to Make Cafe Latte Shakeology Mousse
To start with, you will want to add 2 egg yolks to a small bowl, use a fork to beat them lightly, and set aside. Then warm heavy whipping cream in a medium saucepan over medium heat. You don’t want it to boil. This should take about 5 minutes.

Add a Shakeology scoop to the saucepan and continue stirring so that it begins to thicken. This could take anywhere from 2-5 minutes depending on the heat.

It will start to bubble lightly and that is perfect. Keep stirring until slightly thicker. Do not boil.
Temper egg yolks: Pour a small amount of Shakeology mixture into the egg bowl. Mix quickly and add back into the saucepan. Continue stirring for another few minutes as the pudding thickens more.

Remove from heat, add to mason jars or serving bowls and cool for at least an hour before serving. It will finish thickening (if needed) in the fridge).

NOTE: you can always blend the Shakeology with the heavy whipping cream first to make sure the Shakeology gets completely dissolved. This will thicken it, but don’t worry, it will thin out once you warm it up to temper the egg yolk!

What is Mousse Made of?
Mousse is a very fun, usually light and airy dessert with a base of heavy cream and egg. Definitions vary, but that is the basis. This Shakeology Mousse is a bit denser than the traditional mouse and that is purposeful. Many mousse desserts are actually very rich and also very dense, which this one is.
I have always made my mousse desserts a bit heavier. Not heavy enough to be a pudding, but about midway. I like that dense, yet not too dense texture.

Can I Use Another Shakeology Flavor?
You most definitely can use another flavor of Shakeology. In fact, I made this Cafe Latte Shakeology Mousse dessert in such a way that you can substitute ANY Shakeology flavor and it will turn out just as wonderful. Make sure to check out which is the best Shakeology flavor!
Chocolate Shakeology mousse would be quite divine tasting, don’t you think?
Shakeology Mousse Toppings
So many options for toppings! I had to narrow it down to the best of the best.
Homemade Whipped Cream
Yes, definitely whipped cream. You can use store bought whipped cream if you like, but that will be WAY higher in sugar and carbs than simply making your own. And it is SO easy! Just follow my recipe for homemade keto whipped cream and you’ll have a tasty topping in no time!

Caramel
There is something about coffee and caramel that just go so lovely together. I almost want to throw some nuts on top too and make it a sundae!
Chocolate
And, of course, chocolate! Chocolate goes with anything. Literally anything. Probably even bacon!
