This Cafe Latte Shakeology Mousse is quite the dessert. My husband could not get enough of it. In fact, he even devoured one of my mason jars full of mousse for lunch one day. I didn’t mind as I know it was healthier than other choices he could have made.

Is this Cafe Latte Shakeology Mousse Low Carb?

Of course this Shakeology Mousse is low carb. Almost everything I make is low carb! It has 7 total carbs which by any measure is low carb for a dessert.

The next question would be is it keto friendly? I would say that would be a personal choice. Most keto desserts are definitely higher in carbs than a normal meal, but if it fits your macros, then it can certainly fit into a keto lifestyle. It is gluten free too!

How to Make Cafe Latte Shakeology Mousse

To start with, you will want to add 2 egg yolks to a small bowl, use a fork to beat them lightly, and set aside. Then warm heavy whipping cream in a medium saucepan over medium heat. You don’t want it to boil. This should take about 5 minutes.

Add a Shakeology scoop to the saucepan and continue stirring so that it begins to thicken. This could take anywhere from 2-5 minutes depending on the heat.

It will start to bubble lightly and that is perfect. Keep stirring until slightly thicker. Do not boil.

Temper egg yolks: Pour a small amount of Shakeology mixture into the egg bowl. Mix quickly and add back into the saucepan. Continue stirring for another few minutes as the pudding thickens more.

Remove from heat, add to mason jars or serving bowls and cool for at least an hour before serving. It will finish thickening (if needed) in the fridge).

NOTE: you can always blend the Shakeology with the heavy whipping cream first to make sure the Shakeology gets completely dissolved. This will thicken it, but don’t worry, it will thin out once you warm it up to temper the egg yolk!

Notes

Sometimes it can be hard to get all the Shakeology to dissolve in the saucepan. Another option is to blend the heavy whipping cream with the Shakeolog before adding it to the saucepan. This will thicken it quite a bit. So once added to the saucepan, it will melt it enough to temper the yolk. Either way works great.
