Cafe Latte Shakeology Mousse

  • Add 2 egg yolks to a small bowl, use a fork to beat them lightly, and set aside.
  • Warm heavy whipping cream in a medium saucepan over medium heat. You don't want it to boil This should take about 5 minutes.
  • Add a Shakeology scoop to the saucepan and continue stirring so that it begins to thicken. This could take anywhere from 2-5 minutes depending on the heat. It will start to bubble lightly and that is perfect. Keep stirring until slightly thicker. Do not boil.
  • Temper egg yolks: Pour a small amount of Shakeology mixture into the egg bowl. Mix quickly and add back into the saucepan. Continue stirring for another few minutes as the pudding thickens more.
  • Remove from heat, add to mason jars or serving bowls and cool for at least an hour before serving. It will finish thickening (if needed) in the fridge).

Notes

Sometimes it can be hard to get all the Shakeology to dissolve in the saucepan. Another option is to blend the heavy whipping cream with the Shakeolog before adding it to the saucepan. This will thicken it quite a bit. So once added to the saucepan, it will melt it enough to temper the yolk. Either way works great.
