Sometimes I get in a rut with side dishes. There are only so many variations of cauliflower one can make. I do love a good cauliflower rice side dish, but sometimes I need to spice it up a bit.
I like recipes that are quick and easy, as I’m sure you already know.
This asparagus one does not disappoint!
Ingredients:
- 1-2 bunches of asparagus
- 1/2 stick of unsalted butter
- 4 slices of cooked bacon (see perfect bacon recipe)
- Salt to taste (I use Organic Himalayan Pink Salt)
- Pepper to taste
The fun part:
You can cook the bacon however you want. If you want a foolproof way to bake bacon to perfection, check out this recipe.
Cook bacon to a crispy perfection and then crumble. Set aside.
Boil water in a wide pan. Put asparagus in and boil until bright green. This is normally around 3-4 minutes.
Meanwhile, melt butter in small bowl.
Place asparagus on serving platter and drizzle butter over asparagus. Then sprinkle crumbled bacon on top.
Salt and pepper to taste.
