Asian Inspired Keto Pork Medallions
I was having difficulty naming these wonderfully tasting pork medallions. My hubby did the marinade and was trying to go with an Asian inspired dish, so that is what I went with!
People always freak out when a marinade comes out with higher carbs that they might like – never fear though. The majority of the marinade gets thrown away. Very little actually stays on the meat. But just enough does to give it a wonderful flavor.
If you are sensitive to spice, don’t worry – these are not spicy. They are entirely flavorful though and every kid in my household was pleased.
I cooked them on my Traeger and I think pork tastes the best when grilled. You cook also bake them if you want, but grilling just give is an extra yummy flavor!
Asian Inspired Keto Pork Medallions
Ingredients
- 1/4 cup erythritol
- 1/2 cup Apple Cider Vinegar
- 1 tablespoon Chinese mustard sauce
- 1/2 cup
- 1/2 cup sriracha
- 2 pounds pork loin cut into medallions
Instructions
- Combine erythritol and apple cider vinegar in a small microwave safe bowl. Heat in microwave for 30 seconds (or heat on stove). Mix well. This will help dissolve the erythritol.
- Add chinese mustard, liquid aminos and sriracha and mix well.
- In a large bowl, add pork and marinade. Lightly poke pork to get some marinade to soak in.
- Let sit for 30 minutes.
- Cook pork any way you like.
- If you like the grill, grill for approximately 10 minutes per side until completely cooked. Do not char or cook on high heat as that is not good for meat in general.
