Orange Creamsicle Keto Dessert
OOOOMMMMMGGGGG! I’ve been wanting to make a keto orange creamsicle dessert for a long time now. I didn’t really want to make the frozen kind, though. I wanted a crustless pie type variety.
Making pudding and custards is easy peasy. You can make these the base for many types of desserts and that is exactly what I did.
One of my hubby’s all time favorite desserts is orange creamsicles. I gave him one of these little tart pans with a spoon thinking he’d give it a taste test and then give it back.
He refused to give it back!
He wouldn’t stop eating it and told me it was the BEST dessert I’ve ever made. And I’ve made a lot of desserts!
Do I Have to Use Food Coloring?
This recipe calls for 2 drops of safe food coloring. You definitely do not need to use any food coloring. If you do not, the orange layer will be yellow, but the taste will be the same.
It definitely doesn’t change the flavor at all, so it is up to you whether you choose to use it or not!
Does This Low Carb Orange Creamsicle Really Taste Like Orange Creamsicle?
YES! There are different varieties out there, but this one is another beautiful rendition of the classic dessert.
This one simply has a different form!
Do I Have To Make This Orange Creamsicle Keto Dessert in Mini Tart Pans?
You most certainly do not! You can use whatever you’d like!
You can use…..
a single dish
mason jars
mugs
cups
whatever you want!
You do not have to bake this delicious orange creamsicle keto dessert, so the sky’s the limit in terms of what you want to store it in.
How to Make This Orange Creamsicle Keto Dessert
Let’s make the delightful orange layer first! You’ll need a medium saucepan. In your medium saucepan, warm heavy whipping cream over medium/medium-high heat until hot but not boiling.
You’ll have some time while this is warming up. So, in a small bowl, mix sweetener, almond flour, salt, and xanthan gum. Set aside.
Additionally, add 2 egg yolks to a small bowl, beat, and set aside as well.
Once the heavy whipping cream mixture is hot, add the dry ingredients to the saucepan.
Continue stirring as the sauce begins to thicken and to make sure the dry ingredients dissolve well. This could take anywhere from 2-5 minutes depending on the heat.
If you’ve never tempered eggs before, it is quite simple! You will simply pour a small amount of hot mixture into the egg bowl. Mix quickly and add back into the hot mixture.
Continue stirring for another few minutes as sauce thickens even more. After it is thick enough but still pourable (about 2-4), remove from heat.
Add food coloring and orange extract and mix well.
Add to serving dishes. Let set in the fridge until thick. About 30 minutes. You don’t need to cover if it is only going to be 30 minutes. If it is going to be a lot longer, I would cover tightly with saran wrap.
While the orange layer is cooling, prepare the whipped cream. Don’t do it right away, though. Wait until about 5 minutes before it is done coolign.
In a small bowl, add heavy whipping cream, sweetener, and vanilla. With hand beaters, beat until peaks soft peaks form.
Add to the top of the orange layer and top with optional orange zest.
ENJOY!
