Preheat the oven to 225 degrees.

Add the egg whites, cream of tartar and salt to a mixing bowl. Blend until foamy.

Pour the sugar into the mixture a tablespoon at a time, while continuing to mix the entire time. Beat until stiff peaks form and the mixture is shiny.

These cookies take just 20 minutes to prepare. Once prepped, place them in the oven, set a timer for an hour and relax knowing that your sweet tooth will be taken care of soon!

A typical, non keto meringue cookie can have as much as 25+ net carbs per serving! These sugar free meringue cookies are thankfully nowhere near that. In fact, these cookies have less than 1 net carb per serving!

To make your meringue cookies last as long as possible, be sure to keep them in an airtight container (we have found the best results with glass jars). Meringue cookies can also be stored in an airtight container in the freezer to make them last even longer (several months). The freezer is a great option if you like to keep your portions under control.

I like to store them in the freezer and just take one out at a time for those times when I just want to treat myself. The cookies will thaw out after just a few short hours at room temperature.

Are you out of cream of Tartar and contemplating leaving it out? Don’t. The addition of cream of tartar helps create fluffier cookies and it helps the cookies hold their shape longer.

Meringue is picky. Even the slightest hint of moisture or a flake of an unnecessary ingredient can prevent the mixture from forming properly. Before adding any of your ingredients, double check that your bowl is clean and completely dry.

Meringue is airier and better formed with room temperature egg whites. The best way to bring egg whites to room temperature for best results is to separate the egg whites immediately after removing the eggs from the fridge (eggs are easier to separate when cold), keeping the egg whites in a bowl on the counter for 30 to 60 minutes before starting your meringue mixture.
