Yikes. Now that I think back on it, talk about carb and sugar central!
So when I found myself feeling a little nostalgic, I thought: why not remake this classic dessert Keto style? My friends, let me tell you, the result did NOT disappoint! It was all the krispie, sticky, sweet goodness I’d been missing.
And then I decided to make this dessert even more fun by giving it a spooky twist.
So before October 31st passes you by, do yourself a favor and whip up a batch of these Keto Halloween Rice Krispie Treats. They’re so sticky-sweet and delicious, it’s scary!
…ok, who are we kidding. It doesn’t matter what time of year it is. These bars are so good, they are DEFINITELY worth enjoying all year round.
Are Marshmallows Keto Friendly?
Traditional marshmallows are made from water, gelatin, and sugar. The first two ingredients are fine, but sugar? Not so much.
That also means they have a decently high carb count. If you eat one marshmallow (or about 10 mini ones), that’s about 6 grams of carbs. That adds up quickly!

Are we talking about the aforementioned Rice Krispie Treats from Kellogg? The krispie puffs stuck together with melted marshmallow and sugar? Because, no, those are definitely not a healthy snack.
In fact, 1 bar contains a whopping 17 grams of carbs and 8 grams of sugar. The list of ingredients also boasts some fun characters like corn syrup, fructose, vegetable oil, dextrose, and, of course, sugar.
On the other hand, if we’re talking about these Keto rice krispie treats, that’s a whole other story! With only 1 net carb and zero grams of sugar per serving, that’s quite an upgrade.
I always recommend enjoying desserts in moderation (eat your veggies, people!) But when you’re comparing these low carb rice krispie treats to the store-bought version from Kellogg, then yes, it’s very safe to say that these are the MUCH healthier option.
Can You Only Make Low Carb Rice Krispie Treats For Halloween?
Of course not! I wanted to give them a spooky twist because it was that time of year, but you can absolutely enjoy this amazing treat all year round.
If you don’t care about them turning out orange, feel free to skip the food coloring step.
Should You Store Keto Halloween Rice Krispie Treats In The Fridge?
Yes, definitely!
If left at room temperature for too long, the butter that holds the treats together might soften too much, and the bars will lose their structure. The chocolate will also melt at room temperature.
Plus, storing them in the refrigerator will keep them fresh and safe to eat for longer. So really, it’s a win-win!
Just place your Keto rice krispie treats in an airtight container in the fridge and enjoy within 5 days or so.
How To Make Keto Halloween Rice Krispie Treats
Grease the inside of a 9×9 baking dish well. Place the butter in a microwave-safe bowl and heat until melted.
Add the bag of marshmallows to the bowl. Continue to microwave in 15 second intervals, stirring each time, until the marshmallows are completely melted and smooth when mixed.
Pour the vanilla into the marshmallow mixture and stir until well-combined. Next, add one drop of red food coloring and three drops of yellow food coloring into the bowl. Stir until the mixture is smooth and orange in color.
Add the protein cereal to a large mixing bowl.
Pour the marshmallow mixture over the cereal and stir quickly to combine well.
Transfer the rice krispie treat mixture to the 9×9 baking dish, using a piece of freezer or parchment paper to press it into the bottom. Place it in the refrigerator and let it set for 1 hour.
Place the baking chips in a microwave-safe bowl and add the coconut oil. Heat in 30-second intervals, stirring between each one, until the chocolate is completely melted and the mixture is well-combined.
Use the tines of a fork to drizzle the chocolate over the top of the rice krispie treats. Have some fun with the patterns!
Slice and serve once the chocolate has set.

- Place in the fridge to set for 1 hour.

intervals until completely melted and combined. - Use the tines of a fork to drizzle the chocolate over the top of the rice crispy treats.

I was so excited to see this recipe! Unfortunately, I just saw that the High Key Protein Cereal has been discontinued in 2022! They make their own version of a mini crispy treat. Do you know a substitute brand? I haven’t found one yet.
I found a cereal from a company called Magic Spoon that is vanilla with hints of marshmallow. It’s little circles, but I might try crushing it just a little and using that way. I’ll let you know if I try it.
