Grease the inside of a 9x9 baking dish well.
Place the butter into a microwave-safe bowl and heat until melted.
Add the bag of marshmallows to the bowl and heat in 15-second intervals until completely
melted and smooth when mixed.
Pour the vanilla into the marshmallow mixture and stir to combine.
Place one drop of red food coloring and three drops of yellow food coloring into the bowl with the marshmallow mixture. Stir until completely combined and orange in color.
Add the protein cereal to a large mixing bowl.
Pour the marshmallow mixture over the cereal and stir quickly to combine well.
Press the rice crispy treat mixture into the bottom of the 9x9 baking dish using a piece of freezer or parchment paper to keep it from sticking to your hands.
Place in the fridge to set for 1 hour.
Place the baking chips into a microwave-safe bowl with the coconut oil. Heat at 30 second
intervals until completely melted and combined.
Use the tines of a fork to drizzle the chocolate over the top of the rice crispy treats.
Slice and serve once the chocolate has set.
