Sometimes we just need some cookies. But rolling all those cookies by hand is just so time consuming, am I right? Wouldn’t it be easier to just throw the cookie dough into a skillet, bake it and call it good? Yeah, I thought so too!
These skillet cookies have the perfect amount of softness and crunch! There is simply nothing better than a crunchy on the outside cookie with a soft, warm middle.
How to Make a Chocolate Chip Skillet Cookie
Just a few simple steps to take to make these delicious skillet cookies!
- Preheat oven to 350° F.
- In a medium bowl mix all of the ingredients together except for the chocolate. Once combined stir in the chocolate.
- Place the dough into a 5″ cast iron skillet. Bake for 20 minutes then let rest for 10-15 minutes in order for the middle to slightly set.
- Dig in or serve with your favorite ice cream.

Aside from that, you simply need a mixing bowl, some measuring equipment and something to stir with! All pretty basic!
How to Store Skillet Cookies
I doubt you will have any to store, but if you do, you have several options.
You can simply cover the cooled skillet with the remaining cookies in it. I don’t like this option if it will be stored for more than a day.
Otherwise, the better option is to simply remove the extra cookie portion from the skillet and transfer it to an airtight container!
Leftovers should always be stored in the refrigerator.
How Many Servings in this Skillet Cookie?
I put it as 8. You might balk at that and wonder how in the world a 5 inch skillet could produce 8 cookies. Well, for one they are thick. And two they are a treat! Now, eat the whole darn thing if you want – totally up to you!
I generally do a combo keto/paleo lifestyle. My paleo days are higher carbs clearly and so on those days I may sneak in a treat like this. But I will always be a low carber at heart, so I do try to keep the portions on the smaller side.

- 1/4 cup tapioca flour
- 1/4 cup coconut oil soft but NOT melted
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon paleo baking powder
- 1/4 teaspoon sea salt
- 1/2 cup paleo chocolate chips
