Keto Butter Corned Beef
My favorite days to cook dinner are when I use my Crockpot. Simple, easy cleanup and I get to smell my yummy dinner cooking all day long.
Butter and garlic are probably two of my favorite things. Which makes this keto butter corned beef even that much more special!
Corned beef is incredibly simple to make and almost impossible to screw up – BONUS! Often they come with a little packet of spices, but just in case it doesn’t – no worries.
The fat gives this meat a delicious flavor and you don’t even need the spices. I like to use them though if they are provided. And then adding the butter that melts into the meat? Oh…. Yes!!!

If you don’t have a crockpot or Instant Pot, I highly recommend them ASAP! Definitely a kitchen essential in my house.

How to Make Corned Beef
This is the fun part! You only need 5 ingredients!
You place your corned beef into your crock pot and sprinkle with the spice mix that most likely accompanied it.
Add some water and beef broth. You can use chicken broth, but I think beef broth tastes the best with this recipe.
Here is the interesting part. You want to stuff the butter into the beef. You make slots with your knife and then put butter chunks into each one. You can make as many or as few as you like. I like to spread them out.
Then pepper to taste.
Cook on high or low depending on your preference and you will have an amazing dinner!

What to do with leftovers?
So you just cooked an amazing keto corned beef and you have leftovers. What to do???? Well, you can make this amazing low carb corned beef hash or simply warm up the leftovers and eat them for lunch!
Is Corned Beef Keto Friendly?
It sure is, especially since corned beef is high in lovely fat!
Recipe note
Inserting the butter is a bit weird and can get a little messy. I find that if you make a slit, then twist the knife sideways, it makes a slightly larger slot to fit the butter in!
Just go ahead and jam it in there. It will be sticking out the top and that is perfectly fine!

Butter Corned Beef
Ingredients
- 3 lb corned beef with optional spices included
- 1 cup water
- 1/2 cup chicken or beef broth
- 4 tablespoons grass-fed butter
- pepper to taste
Instructions
- Put corned beef into crock pot. If a bag of spices was included, sprinkle it into corned beef.
- Cut butter into smaller chucks.
- Make small slits in corned beef and insert butter chunks.
- Add water, broth, and pepper to taste.
- Cook on high for 4-6 hours or low for 6-8 hours
