Is it just me, or do all the best desserts come out around the holidays? From thumbprint cookies to chocolate crinkle cookies, it’s hard to imagine how we’ll fit them all into one season.
But if I’m being honest, I think I look forward to this Keto Christmas crack more than any festive treat all year! After all, who can resist such a decadent sweet and salty combination?
This is one of my favorite desserts to whip up every weekend between Thanksgiving and Christmas. You never know when you’ll need it for a holiday party, family gathering, or just to satisfy your sweet tooth.
Whether you’ve been missing Christmas cracker candy or want to try a new Keto-friendly treat this year, this recipe is one you absolutely can’t miss. It’s also great for sharing with family and friends — no one will ever guess it’s low carb!
What Is Christmas Crack?
This traditional holiday treat is a sweet and salty combo that’s sure to win you over from the first taste. Crackers, toffee, and chocolate come together for one irresistible bite!
I’m not sure if the name comes from the fact that it’s made with crackers or because it’s crazy addicting. Maybe a little bit of both.
Traditionally, this recipe is made with saltine crackers or Ritz crackers as the base. For this Keto version, we’ll make an easy fathead dough cracker instead to drastically reduce the carbs.
While the fathead cracker is baking, we’ll whip up a super easy toffee mixture for the next layer. All you do is combine some butter and Swerve low-carb brown sugar in a saucepan, heat until thickened, then pour.
And finally, we add all the wonderful chocolate. I like to do a layer of Lily’s low-carb chocolate baking chips, then melt low-carb white chocolate in two bowls and mix with red and green food coloring. The festive drizzle is the final touch!
Variations For Your Keto Christmas Crack
The beauty of low-carb cracker candy is that you can really make it however you want. Feel free to have some fun with this recipe!
Pressed for time? You can skip the white chocolate drizzle, or even add a few white chocolate chips on top to complete the candy.
You could also add some fun toppings. Chopped nuts, shredded coconut, or sugar-free green and red sprinkles are just a few ideas for you to try.
Can’t get enough of white chocolate? Use it for the full chocolate layer instead of dark or milk chocolate! As the white chocolate is melting, you could even add a few drops of red and green food coloring to swirl around.
You honestly can’t go wrong with this treat. It’s also a great recipe to make with the family so you can let the kids decorate their own!
Can You Store Keto Christmas Candy Crackers?
You bet! Once you break the full sheet into 24 pieces, store them in an airtight container in the refrigerator.
Keto Christmas crack should be eaten within a week or so. However, I will say that I’ve never, EVER had it last that long in my house… I usually end up hiding a few pieces behind the salad so the rest of my family doesn’t eat them all!
How To Make Keto Christmas Crack
Add the cream cheese and mozzarella cheese to a microwave-safe bowl. Microwave in 30-seconds increments, stirring in between, until the cheese is melted and blended.
Transfer the cheese to a mixing bowl. Add the almond flour, egg, baking powder, 1 teaspoon of the vanilla, and 2 tablespoons of Swerve confectioners sugar substitute. Blend until a well-combined dough forms.
Place the dough in the fridge to chill for 30 minutes.
Preheat the oven to 350 degrees.
Roll the dough out between two pieces of parchment paper into a rectangle about ¼ of an inch thick.
Bake the dough for 10 minutes, then remove and slice into cracker shapes with a pizza cutter. Bake for another 5-10 minutes until browned and cooked through.
Transfer to a fresh sheet of parchment paper on a baking sheet.
While the cracker dough is baking, add the butter and Swerve brown sugar to a saucepan over medium heat. Bring to a boil for 3-4 minutes, whisking occasionally.
Remove the mixture from the heat and add 1 tsp of vanilla.
Pour the mixture over the crackers.
Let cool for 4 minutes, then sprinkle the chocolate chips on top.
Allow the chips to melt, then smooth the chocolate into an even layer over the crackers.
Chill in the fridge until hardened.
Divide 1 cup of white baking chips between two microwave safe bowls. Heat in 15 second increments until completely melted.
Add red food coloring to one bowl of white chocolate chips and green food coloring to the other. Stir each bowl separately.
Drizzle the colored chocolate over the Christmas crack and allow to set.
Cut the Christmas crack into 24 pieces and serve.
