I LOVE mug cakes, especially this keto chocolate collagen mug cake.  A dollop of peanut butter on top really makes it a home run!

Mug cakes are awesome because they are a quick and easy single or double serving dessert that doesn’t make a big mess and doesn’t take a ton of time.

When you are craving something sweet or your kiddo asks for a dessert, whip this up and enjoy!

Keto Chocolate Collagen Mug Cake

Keto Chocolate Collagen Mug Cake

Ingredients

  • 2 large eggs
  • 2 tablespoons full fat coconut milk
  • 1 tablespoon almond butter
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Pink Himalayan sea salt
  • 1 tablespoon raw cacao powder (up to 3 tablespoons for more chocolate flavor)
  • 1 scoop keto collagen powder
  • 10 drops liquid stevia (optional)
  • 1 teaspoon keto approved natural peanut butter

Instructions

  1. In a small bowl, whisk eggs, coconut milk, and almond butter until well combined.
  2. Add salt, baking powder and cacao powder. Mix well.
  3. Add collagen and stevia. Mix well.
  4. Pour into microwave safe mug style cake and microwave for 2 minutes.
  5. Remove from the microwave carefully.
  6. Top with a dollop of peanut butter (or nothing) and enjoy!
