Gluten Free Ham and Potato Corn Chowder
I’ve had an Instant Pot for a long time. I’ve used it for a few things, but not many. I remember back in the day when I had a pressure cooker and the first time I used it, I was afraid it was going to explode!
I’m a creature of habit and I got used to just using my crockpot. I am stepping outside my comfort zone and shaving time off dinner preparations by using my Instant Pot.
This gluten free ham and corn chowder was a hit with my entire family. Now, this is a big deal because I have a husband and 5 kids and it is a rare occasion when everyone is happy.
But tonight? SCORE!
If you love thick and creamy soups and chowders then you will LOVE this soup!
Do I Need to Use Corn?
No, you don’t. If you do not eat corn, then you can either leave it out or replace it with something similar.
Additionally, you can sub out the cornstarch for arrowroot or xanthan gum. Xanthan gum is derived from corn, however, so arrowroot might be a better choice.
What is the Difference Between a Soup and a Chowder?
Chowders are simply thick, chunky soups. Soup is usually thinner than a chowder and can be smooth or chunky.
I prefer chowders over soups because I like the thick creaminess of them. Soups are a bit to thin for me in general. AND chowders tend to fill me up more than soups.
What Do You Serve Corn Chowder With?
What was a hit in our house was serving it with this gluten free cornbread. SCORE! Half the household dipped the cornbread directly in the soup and the rest ate it with butter! I did both.
Other options are gluten free dinner rolls or flatbread!
But, in reality, it is filling enough where you don’t NEED to serve it with anyone!
How to Make Ham and Potato Corn Chowder
First, set the Instant Pot to saute mode and add the olive oil.
Saute onions, once the oil is hot, for 5 minutes. Add minced garlic and continue sautéing for an additional 2 minutes.
Stir in cornstarch and saute. After about 5 minutes, it will be brown and bubbly and this is what we want.
Turn off the Instant Pot and add the chicken broth.
Scrape the bottom of the Instant Pot pan with a spatula to remove stuck-on pieces of food. Keep everything in the pot still!
Add parsley, thyme, and black pepper and mix well.
Add heavy cream, potatoes, corn, and ham. Continue stirring to make sure it is well combined.
Place lid on instant pot and seal the vent. You will want to pressure cook it for 30 minutes.
When it is done cooking, do a natural release and stir before serving. Be careful as it will be hot!
Gluten Free Instant Pot Ham Chowder
Ingredients
- 2-3 tablespoons olive oil
- 1 small white onion diced
- 2 cloves garlic minced
- 3 tablespoons cornstarch or similar ingredient
- 3 cups chicken or vegetable broth
- 1 teaspoon parsley
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 2 cups heavy cream
- 1 pound red potatoes cut into 1 inch chunks
- 1 package frozen corn
- 8 ounces cooked ham diced
Instructions
