Keto Thai Coconut Chicken Curry
I was in the mood for some good old-fashioned coconut curry. This dinner is slightly higher in carbs than I normally eat due to the water chestnuts. You can leave those out if you need this to be on the lower end of "low-carb".
This dish by itself is not spicy. If you like a little more zing - add some sriracha on top before serving.
The one thing missing was avocado. We forgot to pick some up when shopping. But I think a cut up avocado would be absolutely delightful along with some extra sriracha on top!
